Fresh and deliciously spicy.

I reheated up some Chicken, Beans & Rice leftovers we had in the freezer. I topped it with Shredded cheddar cheese, Pico de Gallo and Sour cream. Delicious!

After a day of hiking in Peña de Bernal, we walked into the pueblo of Bernal, sat back and had the best 'arrachera' ever. I loved the rustic presentation so much I had to snap it. My mouth waters remembering the fresh pico de gallo, guacamole, mashed garlic potatoes, grilled onions... and the succulent meat. Yum!

Maki de causa limenya i pollastre. Patata amb “ají amarillo” i pollastre, "pico de gallo” i alguna cosa més que no recordem en un conjunt molt saborós i amb un estimulant i encertat punt picant. Molt bo.

Burrito stuffing: portabella mushrooms marinated in balsamic vinegar and minced garlic. Toss in some sautéed onions, pico de gallo, fresh cilantro, and a dash of hot sauce.

Everything from my own garden but the onions and limes :)

 

- 2 medium yellow Roma tomatoes, diced

- 1 medium red Roma tomato, diced

- 3 small Jalapenos, chopped fine

- 1/4 white onion, chopped fine

- kosher salt and lime juice to taste

 

My recipe sort of varies depending on what I've got on hand, but this is not bad :) I make it well ahead of time and give a few hours for the lime juice and salt to season it well.

Homemade crab quesadillas & pineapple salsa

 

Quesadilla: shredded taco cheese, diced red onion, red pepper & jalapenos, Hormel real bacon pieces, and crab meat on low-carb/low-cal multigrain tortillas. (we meant to put corn in them too but forgot - d'oh!) And then we bake them on a baking stone, we don't fry them in oil.

 

Pineapple salsa - crushed pineapple, diced red onion, red pepper & jalapeno pepper, and fresh cilantro.

Day 38/365. Camarones al chipotle. Shrimp in creamy chipotle sauce, Mexican rice, salad with pico de gallo. $13.25. Don Ramon, Parma Heights, OH.

Guess what we had for dinner tonight.

do you suddenly have a hankering for a kickass salsa made from raw vegetables and fighting spirit? well boy do i have the thing for you!

you're gonna want to get you some of these:

 

1 large tomato

1/2 white/yellow onion

2 cloves of garlic

2 jalapenos

1/2 of a can of corn

some cilantro

1 tbspn of kosher salt, so as not to offend yahweh, lord of the hebrews

1 tbspn of red chili powder

a positive attitude :D

 

take the cleanest, sharpest knife you have and get dicing! chop that onion and tomato into approx 1/4" sort-of-cubes. then, take your cilantro and slice it up until you get about 2 tablespoons worth. after that, dice your jalapenos and garlic however small you like. toss all that into a container, then empty half a can of corn into it (and do whatever with the other half. don't let THE MAN tell you what to do with your hard-earned corn!), followed by one tablespoon of kosher salt and one tablespoon of red chili powder. then grab a spatula (or use your hands if you're feeling adventurous) and mix that shit until it looks like it's been mixed. refrigerate for three to four hours, then serve with anything. as a pictorial reference, you'll be making two of these containers' worth.

veggie tacos with spicy slaw

My 20 July 2014 Cheap Eats column in the Virginia Beach Beacon insert of The Virginian Pilot newspaper reviewing a dish at 3 Amigos restaurant.

Alex, Sam and other friends and I were munching on fruit at the end of the party.

I helped my mom run to Fiesta off 38th Street in Austin, Texas to replenish her tortilla stash ( they have the best ones, in town ) and of course her collection of candles she needs to burn.

 

While leaving, I saw these HUGE tacos at the stand in the entrance. So naturally, I wanted to see what's up.

 

It's a large Chicarron ( fried pig skin ) with avocado, shredded cheese, lettuce, pico de gallo, and sour cream ). It was so good, and darnit, it was only $2!

From La Palapa on Hawthorne. This is one of those where the food looked better than it tasted. It was alright, nothing to write home about but what really annoys me is the price tag.

 

On the plus side, they were inexplicably showing the Canada/Russia quarterfinal from the IIHF World Championships.

In the border lands of northern Mexico and into Texas this is pico de gallo or just "pico."

 

Further south and/or west it is 'salsa fresca.' Simple stuff it is. Chopped white onion, chopped tomatoes, chopped cilantro, chopped jalapeño, squirt of lime juice. Fresh is the key.

 

Chopped coarse it can be a side dish like a salad. Chopped fine it can be a relish on tacos, tostadas, or any thing else you like. It's a healthy mix too.
