Lentil and Vegetable Medley
Lentils are frequently on the menu in this house – they are cheap, nutritious, low fat and delicious! I often use them instead of potatoes or rice as an accompaniment to meat dishes. In this instant it is the lentils themselves that are the star of the show.
I used urid dal for this recipe, but any lentils would do. I often add an extra onion in dishes such as these, partly because I love onions, partly to bulk the dish out a bit, partly to make suer I get my superfree in.
Serves 2
½ Syn on Extra Easy
1 cup lentils
2 onions, chopped
2 carrots, peeled and chopped
handful green beans, chopped
2 tomatoes, deseeded and chopped
1 red chilli, finely chopped
½ bunch basil leaves, torn
2 tubs Müller Light coconut and vanilla yogurt
bouillon powder or stock cube
Fry the onions in Fry Light for a few minutes, then add the lentils, enough water to cover and the bouillon powder or stock cube. Bring to the boil, and cook for about 10 minutes, keeping an eye on it to make sure it does not boil dry. Add more water if necessary. Add the carrots, green beans and chilli and cook for a further 15-20 minutes until the lentils are cooked to your liking. I like mine only just cooked with a little bite in them still. Add the tomatoes and stir well for a minute, then take the pan off the heat. Let it cool ever so slightly for a couple of minutes, then stir in the yogurt and basil.
Nutritious home cooked soup.Throw in some qizhi (boxthorn/medlar seeds) .These seeds are supposingly good for maintaining good eye vision.

A non profit organization Food not Bombs prepared a delicious, nutritious good for homeless in Houston. Monday, Wednesday and Friday at 8pm and Sunday at 7pm at 521 Lamar St., 77002 (The Houston Downtown Public Library Courtyard).
I was told that the organization feed usually 100-150 hungry people that show in that location.

The LA County Library’s annual Lunch at the Library program returns, providing free, nutritious meals to kids and teens 18 and under during the summer months.

In addition to combatting micronutrient deficiencies, the production of nutritious soy/wheat bread stimulates market development for locally produced wheat and soy beans. To produce their “naan”, bakeries buy soy/wheat flour supply from commercial flour millers. The latter collect their soy/wheat grains from smallholder farmers supported by WFP through its P4P programme. Since 2006, WFP has been working with smallholder farmers, flour millers, bakeries and Afghan factories to stimulate local food production, connect farmers to the market and promote the entire food value chain through marketing of, and awareness raising about locally produced nutritious foods. Adamya Chetana (www.adamyachetana.org) is a charitable organization working since 1997 in the field of education with Anna – Akshara – Arogya (Food – Education – Health) as its core intervention areas. It serves hot, tasty and nutritious mid-day meals to about 1.5 lakh school children every day. Apart from its extensive work in the areas of Child, Women development and sustainable development of villages, Adamya Chetana is well known for its deep commitment to adoption and spreading of green lifestyle. It’s ZERO garbage kitchen serving tens of thousands of children, fossil-free fuel cooking have been models for others to follow for many years. Its mass movement, Sasyagraha with programs including Green Sunday to plant trees every Sunday, Green Bharat 1:1 to increase green cover of our cities has seen huge traction.
Adamya Chetana, today organised eco-Chetana, an event to further propagate Green Lifestyle. The event was organised at Sri Atal Bihari Vajpayee sports ground in front of Yadiyur lake in Jayanagar, Bengaluru. This platform brought together a team of renowned experts who conducted targetted workshops related to practical adoption of eco-friendly green lifestyle. These workshops saw hundreds of people participating in them. The event had a number of stalls exhibiting and selling related products and services like organic produce, natural food products, clothes, bags,soaps, etc. Hundreds of people were seen milling around inspecing and buying these green lifestyle goods.
The event started at 9:30 AM with invocation and Shri Ram pooja, a welcome address by a 4th standard student Kumari Neha and inauguration by Shri AnanthKumar, Chief Patron of Adamya Chetana and Hon’ble Union Minsiter for Parliamentary Affairs and Chemicals & Fertilisers.
Along with Shri AnantKumar, Dr Tejaswini AnanthKumar, many other dignitaries including Dr. Khader, Shri Sadashiv, Shri Dhanaraj, Smt Pratibha Dhanaraj ,Shri NT ramesh, Shri Anand Hosur, Shri Anilkumar and many corporators were present.
We started ZERO garbage kitchen and fossil free fuel cooking at Adamya Chetana 7-8 years back. But that is not enough. We want to spread these practices to many others said Dr. Tejaswini, Chair Person of Adamya Chetana when introducing Adamya Chetan on why she organised eco-Chetana.
“Expert doctors cite lifestyle as priamry cause for current day rise in deseases including cancer, diabetes, kidney related deseases. And food plays an important role. It is critical to go back to a green lifestyle of Shri Ram, who is believed to have used millets, fruits and vegetables during his Vana vas” said AnanthKumar.
This was followed by an insightful session on Importance of Millets by the renowned health specialist Dr. Khader.
“Wrong food, wrong environment cause deceases and destroy the environment. 1 kg sugar needs 18000 l of water! Eat right, sleep right. On this day of Ramanavami, the Rama-Bana for all deceases is millets.
And if we switch to millets, we can feed 4 worlds and if we continue to eat what we eat, we need 4 worlds to feed us. Give up tea, coffee, milk, rice, wheat, eggs, meat for good health and to save environment@ said Dr. Khader.
After this, the workshops and demonstartions that people were eagerly waiting for started off. Adamya Chetana had organised both online and in-person pre-registrations for the event, where hundreds of peole had regsitered their interest in participating.
Terrace Gardening workshop by Dr. Rajendra Hegde demonstrated simple techniques of groowing our own food in small spaces – be it houses or apartments. People were keen to understand which seeds to use, best pots or containers to use, soil/compost to utilise, providing water and sunlight, avoiding pests, etc.
Zero Garbage Home Composting workshops by Smt Vani Murthy talked about how practical tips to be used by small and large kitchens cto reduce or elimiate producing garbage. Adamya Chetana runs ZERO garbage kitchen. Even if not ZERO, most kitchens can reduce garbage. Experts showed how simple steps like water reuse, using green waste to compost can not only reduce wastage, garbage and bad odour in your own kitchen, but also contribute to reducing our city’s garbage problem! Necessity is the mother of invention - removing garbage bins to stary with has made many kitchens innovate to reduce, reuse and recycle waste was an interesting tip!
