Nutritious and delicious - I made this brilliant magenta beet soup from Barbara Kwasnik's amazing authentic Polish recipe. The color was just too wonderful not to take a photo, though I'm afraid the real color doesn't quite come through.

In order to emphasize the important role breakfast plays in education, Sodexo’s team at San Jose Unified School District is taking positive breakfast messages directly to students through different activities. Not only are we joining schools throughout the U.S. in celebrating National School Breakfast Week from March 5 through 9, but we also took our role promoting breakfast to the next level by participating in the annual Sodexo Future Chefs: Healthy Breakfast Challenge. This is a national program that uses activity and the spirit of friendly competition to encourage students to eat healthy and nutritious breakfasts at nearly 250 Sodexo-served schools in 27 states across the country. Sodexo challenged all San Jose Unified School District middle school students to come up with creative breakfast recipes. Siddhus are prepared by grinding 'posth' (Seeds of Opium), along with spices, coriander, green chilly, wallnut and then packing this paste inside a wheat dough. The dough is firstly fermented by adding yeast to it, for three hours. The dough is packed in such a manner so as to give a very unique boundry to it. This packed material is then stemmed in a special utensil called 'Mokta' and then served along with 'ghee'.
Ingredients ( for 10 Siddhus)-
Posth - 200 gms (Soak for 1 hour)
Coriander - 20gms
Wallnut - 10 pieces
Salt - 2 table spoons
Green Chilly - Two pieces
This mixture is then grinded into a paste.
Wheat flour - 400 gms
Mix one table spoon of yeast with it and make dough and leave for three hours. Cover the dough with blanket so that the heat is conserved and process of fermentation is accelerated.
Press the dough into small circles and fill around two tablespoons of paste into it. Pack it in a manner as shown in pic.
These are then stemmed for 30 minutes and served along with Ghee (prepared from cow's milk) or Chutney.
