Monday tea. Curry salmon and green vegetables in coconut cream and lemon juice.

G'day food lovers,

 

In a hot frypan I cooked and wilted some silverbeet leaves and stems plus the green part of the spring onions. After the silverbeet stalks were soft I added in a couple of tablespoons of curry powder and stirred everything to ensure the powder was coating everything. I then added in some diced salmon and half a tin of coconut cream. Once the coconut cream was mixed through and bubbling I added the lemon juice. After a couple of minutes, the salmon was cooked so I turned off the heat and tossed in the slices of the white part of the spring onions, plus the chopped coriander and parsley leaves, stems, and roots.

 

I garnished with slices of cucumber and almond flakes.

 

It was delicious. Have a good night. Catch you later.

Spam, Kale sprouts, Cabbage, Dijon mustard, Butter, Cream, Queensland nuts

  

G'day food lovers,

 

Tonight I'm thinking of a friend whose grandmother is very ill.

 

It's Friday night and it's been a good week so I need to have an easy Friday night tea.

 

I grabbed a tin of Spam with bacon. Opened it up, sliced the slab in half coronally and then cut it into cubes. I tossed the Spam into a frypan and got some colour on the Spam. I then added in some kale sprouts and red cabbage and put the lid on. After a few minutes I added a knob of butter and watched it melt.

 

Once the butter had melted I splashed in some cream and a teaspoon of Dijon mustard. I then added in some Queensland nuts. You know what, call 'em Queensland nuts and Macadamia nuts. Genus Macadamia consists of three major species and most of the trees grow in Queensland and some parts of cockroach land.

 

Anyway, it was a delicious meal and now I'm ready to go to bed.

The last couple of nights have been heavy with cabbage, butter, and cream. Tonight I'm eating relatively light with cherry tomatoes, avocado, and a piece of perfectly cooked chicken thigh.

G'day food lovers

 

Happy Friday everyone. I cooked the chook with my MEATER™ wireless meat thermometer. I cooked the chook on a rack over some shredded red and green kale which I doused with cream. I also put a couple of blocks of butter in the kale to melt while it cooks.

 

After the chook cooked I took the rack off while the chook rested and put some Coon™ on the cooked kale and put it back into the oven while the chook rested.
