Saturday lunch. Leftover KFC with kale sprouts.

I peeled the skin off two pieces of KFC and put it in an oven to make it crispy.

Lunch was leftover sous vide duck breast and slices of celery.

Duck, Spinach, Tomatoes, Garlic, Parmesan, Cream

 

G'day food lovers,

 

Tonight I had some leftover sous vide duck breast from the weekend and served with with a creamy cheesy spinach and tomato sauce.

 

I cut the duck breast into slices and quickly sautéed them in a hot frypan. I transferred the breast meat onto a plate and fried off some minced garlic in butter. I tossed in some halved cherry tomatoes and added a handful of grated Parmesan cheese and stirred it through. I added a handful of spinach leaves and cooked until they began to wilt. I seasoned it with some iodised salt and freshly cracked black pepper and then poured in a little cream. I added in the breast meat and simmered until the cream reduced a little. It was delicious.

Happy Hump Day!

 

For tea tonight I had some leftover roast rump and served it with a kale and red cabbage broth made with vegetable stock.

 

I sliced the roast rump into thin slices with a sharp knife.

 

I boiled a saucepan of water and added a vegetable stock cube and stirred it until the cube had dissolved. I shredded the red cabbage and kale and tossed it in to par boil along with some drops of sesame oil and a glut of fish sauce. When the cabbage had softened, I added in the slices of meat and stirred them through. I transferred everything to a bowl and garnished the dish with chopped spring onion, coriander roots, stems, and leaves.

 

This was a very simple and easy dish. Have a good night. Bye.

Tonight roasted a chicken thigh using my wireless meat thermometer from MEATER and Apption Laboratories.

 

I rammed the probe into my meat and then put it onto a rack on a baking tray and put it into a preheated oven which was set to 200 °C. I was guided by the MEATER app for the cooking time. In a frypan I added some bacon pieces, frozen Brussels sprouts, and frozen cauliflower and cooked it all until it was getting a little soft. I then added some butter, kale leaves and parsley and cooked on a low heat while the chicken cooked. As the chicken was resting, I turned the heat up on the frypan and added some cream and cooked it until the cream reduced to a nice saucy consistency.

Tonight I cooked everything in one container. I used my MEATER™ wireless meat thermometer to cook a piece of chicken guided by the MEATER™ app on a tablet device.

 

I had the chicken on a rack over a baking tray. In the baking tray I had a little water plus sugarloaf cabbage, red cabbage, and green kale. These vegetables cooked in the juices the chicken was releasing during cooking.

 

I had dry brined the chicken overnight by drying the skin with paper towel and then salting the skin liberally with iodised salt and allowing it to rest in uncovered in the refrigerator. This ensured nice crispy chicken skin.

I chopped up some cabbage and sautéed in olive oil. Once the cabbage was soft I added in sliced chicken thigh. Garnished with an avocado cheek.

After Manila, which involved a vasovagal episode, diarrhoea, vomiting, fever, and side effects of antidiarrhoeal drugs my appetite is back.

I've been away for a week for work. I got sick with a gastrointestinal problem and experienced some side effects from the antidiarrhoeal medication. I haven't really eaten much since Tuesday evening. Tonight my appetite came back.

 

I bought some chicken wings and a packet of kale sprouts. I rubbed some Queensland nut oil into the wings and sprouts and added a little iodised salt.

 

I tossed it all into an oven-proof frypan and cooked it all together at 180 °C for 40 minutes.

 

I hope at the end of the weekend I can fart with confidence.

I've been away this weekend and eating everything in sight.

 

I decided to eat something relatively light.

 

I diced a slab of speck and fried it off in a hit frypan to render out the pork fat. I then tossed in a handful of spinach. As the spinach began to wilt I added a handful of grated Coon™ cheese. I then cracked the shell of an egg and added the egg in the middle. I put the lid on and cooked for 3 minutes.

 

The egg is effectively steamed with set egg white and a runny yolk.

Tonight I sliced some of the brisket I cooked in the slow cooker on Sunday.

 

I reheated the brisket in a frypan with some rice bran oil. I then added in some red cabbage, sugarloaf cabbage, green kale, and kale sprouts. I put the lid on the frypan to get the vegetables to cook through and wilt a little.

 

Once the vegetables had gone limp, I added some garlic butter, then some cream, and then stirred in some horseradish cream.

 

I turned the heat off and tossed in and stirred through some halved cherry tomatoes.

Last night, I made a salmon and cabbage soup with laksa flavours. I have leftovers because I attended a lecture tonight on the bioethics of public health surveillance.

 

I started with sautéing kale leaves, red cabbage and sugarloaf cabbage to which I added about a cup of water and a couple of tablespoons of laksa paste. I stirred everything through until the paste had dissolved and the water began to boil. I turned the heat down and allowed the cabbage to simmer and absorb the flavours from the laksa paste.

 

I poured in a tin of coconut cream and the juice of a lemon and stirred bringing the pan to a simmer again.

 

I then tossed in the salmon and stirred until the salmon had changed colour on the outside. I then added in the sliced roots and stems of the coriander and turned the heat off. I let the soup sit for a few minutes and then tossed in the spring onion, red onion, and coriander leaves.

 

I ladled the soup into a bowl and put the remainder into a Tupperware™ container for tonight. I reheated the soup using microwave radiation for 3 minutes.

I ate too many carbs today in the form of RSPCA cupcakes. I needed a light tea. I tossed the salmon, kale sprouts, and almond flakes in rice bran oil and then baked it for 15 minutes at 200 °C (400 °F).

 

I think ManFlu will take me tonight. It's been nice knowing you all.

I splurged tonight. I roasted some pork belly in a my toaster oven for 45 minutes at 200 °C.

 

With a mandolin I sliced up some red cabbage, carrot, red onion, and fennel. I tossed in some halved cherry tomatoes and mixed everything through.

 

In a bowl I added the slaw and then slices of the cooked pork belly with the crispy crunchy crackling. I then topped it with the leftover homemade Tabasco™ Hollandaise sauce.

 

It was amazing.

Tonight I enjoyed slow cooker ham and cauliflower soup.

 

I cooked the cauliflower florets, French onion soup packet mix, ham hock, and black peppercorns in a slow cooker for six hours.

 

After six hours, I removed the ham hock and pulled my meat with forks.

 

I puréed the cauliflower and black peppercorns with my Bamix™ stick blender and then added some of my pulled pork plus some cream and a knob of butter to finish the soup.

 

I garnished it with chopped parsley.

 

It was bloody amazing.
