Tonight I roasted a chicken thigh using my wireless meat thermometer from MEATER and Apption Laboratories.

 

I rammed the probe into my meat and then put it onto a rack on a baking tray and put it into a preheated oven which was set to 200 °C. I was guided by the MEATER app for the cooking time. Turned out to be about 39 minutes. In a frypan I added some bacon pieces, frozen Brussels sprouts, and frozen cauliflower and cooked it all until it was getting a little soft. I then added some butter, kale leaves and parsley and cooked on a low heat while the chicken cooked. As the chicken was resting, I turned the heat up on the frypan and added some cream and cooked it until the cream reduced to a nice saucy consistency.

G'day food lovers

 

I was scrounging in the freezer earlier and discovered a packet of potato mash. Rather than waste it because of my low carb living, I thought I should eat it tonight with some duck breast and kale sprouts.

 

I cooked the duck breast for 2 hours at 76 °C (169 °F). I seared it in a hot frypan with some butter.

 

The potato mash is cooked using microwave radiation for 2 minutes and 30 seconds.

 

The kale sprouts are cooked for 15 minutes at 150 °C (302 °F).

 

It's Father's Day here in Australia and the first day of Spring. Happy Father's Day to Australian dads.

Louis started a new nursery today, at the school which I hope he will go to in September. I was quite worried before-hand as he had taken ages to settle in to his pre-school this time last year, but I had nothing to worry about. He went straight in, and when I told him I was just going home to get his scooter, he waved me off!

 

When I picked him up they said he'd been fine, and it was such a relief to hear!

 

When I asked him about his day, he seemed to really enjoy it...

'did you have a nice time?'

'yep!'

'did you play playdoh?'

'yep!'

'did you play outside?'

'yep!'

'did you ride the bike?'

'yep!

'did you make new friends?'

'yep!'

It's Monday and I almost always have salmon on Monday.

 

Rather than pan-fry my salmon, tonight I oiled up a fillet of salmon as well as some kale sprouts and put them into a hot oven for 15 minutes.

 

I shredded some red cabbage, sugarloaf cabbage, carrot, and red onion to make a slaw which I dressed with olive oil and lemon juice. I also added some cherry tomatoes, avocado, and dates plus almond flakes and crushed peanuts.

It's Monday and I always have salmon on Mondays.

 

I pan-fried this salmon skin-side down on a hot frypan for five minutes and then on the other side for one minute.

 

I shredded red cabbage, sugarloaf cabbage, red onion, fennel, and carrot with a mandolin and dressed it with stick blender homemade garlic lime Hollandaise sauce.

 

I served dinner with an avocado cheek.

Happy Hump Day!

 

For tea tonight I had some leftover roast rump and served it with a kale and red cabbage broth made with vegetable stock.

 

I sliced the roast rump into thin slices with a sharp knife.

 

I boiled a saucepan of water and added a vegetable stock cube and stirred it until the cube had dissolved. I shredded the red cabbage and kale and tossed it in to par boil along with some drops of sesame oil and a glug of fish sauce. When the cabbage had softened, I added in the slices of meat and stirred them through. I transferred everything to a bowl and garnished the dish with chopped spring onion, coriander roots, stems, and leaves.

 

This was a very simple and easy dish. Have a good night. Bye.

Tonight rather than last night’s Asian slant, I went with a cheesy creamy bias and baked red cabbage, drumhead cabbage, red kale, and green kale with cheese and cream along with slices of leftover sous vide chicken thigh.

 

I laid the kale down first so it wouldn't burn, then a layer of chicken slices, then the cabbage on top. I then poured on some cream, added some butter, and topped it with cheese.

 

I cooked it for 20 minutes at 180 °C (350 °F).

 

It was okay. I can’t complain.

I hope you've had a good weekend. I've had a huge weekend in food. Yesterday I had that monster lamb kebab. This morning I went to U&Co in Kaleen and had eggs Benedict for breakfast. For lunch I had a thick juicy piece of rib steak with the bone in, and tonight, I baked barramundi in a bag with thyme, tarragon, and garlic butter.

 

I seasoned the Barra with iodised salt and freshly cracked black pepper and put it into an oven bag with some almond meal and fresh tarragon and thyme plus some garlic butter.

 

In another tray I had red cabbage and drumhead cabbage with a little cream and Coon™ cheese.

 

I put both trays into an oven for 15 minutes at 175 °C (350 °F).

 

The Barra didn't taste too bad.

 

I'm enjoying this fish in a bag thing.

Tonight I'm thinking of a friend whose grandmother is very ill.

 

It's Friday night and it's been a good week so I need to have an easy Friday night tea.

 

I grabbed a tin of Spam with bacon. Opened it up, sliced the slab in half coronally and then cut it into cubes. I tossed the Spam into a frypan and got some colour on the Spam. I then added in some kale sprouts and red cabbage and put the lid on. After a few minutes I added a knob of butter and watched it melt.

 

Once the butter had melted I splashed in some cream and a teaspoon of Dijon mustard. I then added in some Queensland nuts. You know what, call 'em Queensland nuts and not Macadamia nuts. The Genus Macadamia consists of three major species and most of the trees grow in Queensland and some parts of cockroach land.

 

Anyway, it was a delicious meal and now I'm ready to go to bed.

I had a huge lunch. I had leftover slow cooked brisket and prawn cabbage laksa soup.

 

I don't feel that hungry so I pulled out a strip of pork belly, put it in the oven for 45 minutes at 200 °C and when it was cooked cut it up and ate it with avocado.

G'day food lovers,

 

Tonight it’s a very basic and simple meal.

 

I roasted my chicken maryland on a rack over a baking tray with a little water to try to keep my meat moist. I cooked the chicken until the internal temperature reached 74 °C. I set the oven to 200 °C.

 

While the chicken was cooking I wilted red and green kale in a frypan with the lid on on a low heat. Towards the end, I added a little grated cheese, cream, and French mustard.

 

It all tasted great together.

I splurged tonight. I roasted some pork belly in a my toaster oven for 45 minutes at 200 °C.

 

With a mandolin I sliced up some red cabbage, carrot, red onion, and fennel. I tossed in some halved cherry tomatoes and mixed everything through.

 

In a bowl I added the slaw and then slices of the cooked pork belly with the crispy crunchy crackling. I then topped it with the leftover homemade Tabasco™ Hollandaise sauce.

 

It was amazing.

Tonight I cooked surf and turf. Prawns, scallops, and scotch fillet steak with garlic, spinach, tomatoes, and cream.

 

I cooked the steak by sous vide at 55 °C for 1 hour. As soon as it was cooked I put the meat in the refrigerator to cool down for searing.

 

In a hot frypan I sautéed the prawns and scallops until they developed colour. I put them in a bowl and deglased the frypan with some butter. I stirred in some minced garlic and once it was browned I added halved cherry tomatoes and a handful of grated parmesan cheese. As the cheese was melting, I added the spinach leaves, and cooked until the spinach wilted. I then added the prawns and scallops and some cream and cooked everything until the cream had reduced.

 

I then seared the steak in a hot frypan, let it rest for 5 minutes, and then sliced it.

I had a big lunch today. I had leftover slow cooker ham hock cauliflower soup. I've been farting all afternoon.

 

I went with a relatively light meal tonight. I used my MEATER™ wireless meat thermometer to cook my chicken thigh perfectly.

 

I also cooked some sweet corn in the oven at the same time.

 

I served the chicken and corn with an avocado cheek and a wedge of butter for lubrication.

Okay, so I cheated on Coles again by entering Woolworths today and exploring the meat section. I saw a nice thick piece of rib steak with the bone in and my eyes lit up.

 

I cooked the steak sous vide at 54 °C (129 °F) for 3 hours and then seared it in a hot frypan with some garlic butter.

 

I put green and red kale leaves into the oven with some cream cheese, Coon™, and cream and cooked it at 200 °C (400 °F) for 30 minutes.

 

The cream and cheese made for a nice sauce for the steak.

The Heart Foundation recently revised its nutrition advice. It lifted restrictions on eggs and dairy and recommended a reduction in mammalian meat.

 

Tonight I've gone meat-free.

 

In a frypan I heated up some cauliflower florets, kale sprouts, green kale leaves, spring onions, and parsley. I then added in some almond flakes and crushed peanuts along with some sesame seeds and poppy seeds. I added a knob of butter to get the greens glistening.

 

I transferred everything to a baking dish and then added a splash of cream, some grated Coon™ cheese, and the cherry tomatoes.

 

I baked it all at 200 °C for 20 minutes.

I've been away this weekend and eating everything in sight.

 

I decided to eat something relatively light.

 

I diced a slab of speck and fried it off in a hot frypan to render out the pork fat. I then tossed in a handful of spinach. As the spinach began to wilt I added a handful of grated Coon™ cheese. I then cracked the shell of an egg and added the egg in the middle. I put the lid on and cooked for 3 minutes.

 

The egg is effectively steamed with set egg white and a runny yolk.

I'm trying to get back into the good books with Coles. I made my own Coles version of fish in a bag. I put a piece of salmon into an oven bag along with some herb butter and cooked it for 15 minutes at 175 °C (350 °F).

 

In a frypan I added some sliced sugarloaf and red cabbage along with a dash of cream. I put a lid on the frypan and cooked the cabbage on a low heat while the fish was baking.

 

I put the cabbage down first and the fish on top. A squeeze of lemon juice plus the melted butter from the bag really added to the taste.

 

The whole meal was delicious.

Happy Friday everyone. I cooked the chook with my MEATER™ wireless meat thermometer. I cooked the chook on a rack over some shredded red and green kale which I doused with cream. I also put a couple of blocks of butter in the kale to melt while it cooks.

 

After the chook cooked I took the rack off while the chook rested and put some Coon™ on the cooked kale and put it back into the oven while the chook rested.

Well, tonight I've gone for simplicity. On Sunday I cooked about a kilogram of chicken thigh fillets so I would have plenty of chicken meat this week.

 

In a frypan I boiled some red cabbage, sugarloaf cabbage, green kale, and red kale in some garlic butter and some French mustard. I also added a little cream.

 

I added slices of the chicken thigh fillet meat at the end and ate the meal from a bowl.

Tonight I enjoyed slow cooker ham and cauliflower soup.

 

I cooked the cauliflower florets, French onion soup packet mix, ham hock, and black peppercorns in a slow cooker for six hours.

 

After six hours, I removed the ham hock and pulled my meat with forks.

 

I puréed the cauliflower and black peppercorns with my Bamix™ stick blender and then added some of my pulled pork plus some cream and a knob of butter to finish the soup.

 

I garnished it with chopped parsley.

 

It was bloody amazing.

Tonight I sliced some of the brisket I cooked in the slow cooker on Sunday.

 

I reheated the brisket in a frypan with some rice bran oil. I then added in some red cabbage, sugarloaf cabbage, green kale, and kale sprouts. I put the lid on the frypan to get the vegetables to cook through and wilt a little.

 

Once the vegetables had gone limp, I added some garlic butter, then some cream, and then stirred in some horseradish cream.

 

I turned the heat off and tossed in and stirred through some halved cherry tomatoes.
