The basics:
2 pounds ground meat
3/4 cup milk
1 1/2 cups starch (cooked rice, oatmeal, crumbs, etc.)
2 eggs
Seasoning used here
1/4 cup ketchup or tomato paste
2 tablespoons Dijon mustard
1/2 onion, chopped and cooked until translucent
2 small carrots, shredded and cooked with onion
salt, pepper, parsley, garlic powder
Baste top with 2 parts ketchup + 1 part Dijon mustard
350 degrees, 1 hour 15 minutes. This is a half-recipe divided between two bakers so I only cooked it 45 minutes.
How do you make meatloaf meatier? Add more bacon. Our recipe calls for diced bacon baked right into our meatloaf. Topped with our hickory ketchup and more diced bacon for an additional layer of rich smokiness. Served with your choice of two sides and dinner bread.
