With Karen, Jerry and Haley out of town (Haley had a cheerleading competition in North Carolina), I felt that I could be a bit more adventurous for dinner tonight.
I decided to make a stuffed meatloaf. I didn't feel like going to the store (perhaps a bit too much to drink last night...) so I had to make do with what I had around the house. Which included some baby bok choy...
So, here's what I did...
I sautéed the chopped onion in extra virgin olive oil while I was "toasting" a couple of pieces of bread in the oven. When the onions were soft, I chopped up the toast (i.e., bread crumbs) and tossed them in the skillet to soak up some of the olive oil and to pick up some flavor...
While the sautéed onion/bread crumb mixture was cooling, I mixed the ground beef with an egg, the cream cheese, some soy sauce, chopped garlic, and some garlic powder. Then I mixed in the sautéed mixture and formed a layer on some waxed paper.
I roughly chopped the bok choy and sautéed it with olive oil, course salt and black pepper. I spread the sautéed bok choy on the meat mixture and added some shredded cheddar cheese and some shredded mozzarella cheese.
I rolled up the loaf, pinched off the ends and wrapped it with bacon. I sprinkled it with paprika and black pepper.
I put it in the pan with a bit of chicken broth and covered the pan tightly with foil. After about an hour, I took off the foil and cooked it uncovered until it reached 165 F. I turned on the broiler for a couple of minutes to crisp the bacon on the top. Then I took out the meatloaf, wrapped it in foil and set it on the counter to "rest".
Some of the cream cheese melted into the combo of chicken broth, bacon fat, meat juice, olive oil and other liquid goodness. I put it in a small sauce pan and used the stick blender to do its thing. (Plus I added a bit of corn starch to thicken it up just a bit...)
This was probably the best meatloaf I've ever had. The bok choy added a bit of sharpness but didn't stand out too much. The meatloaf was very moist and flavorful and the gravy was pure heaven...
Of course, Keira didn't agree and she committed a sin against my culinary religion - she put ketchup on hers. Blasphemy!!

My interpretation of a meatloaf sub sandwich. This really hits the spot when I am craving a comfort meal.
