Such a scrummy recipe this...half premium beef mince 500g; half sausage meat 500g; 1 large, finely diced white onion; throw in some mixed veg...1 egg...1/2 c fine breadcrumbs... 3 giant teaspoons of curry powder. Salt and pepper (rough ground) to taste.
Mix really thoroughly and sprinkle generous amount of grated cheese on top once in large loaf tin. Slice tomatoes and place on top. Grind pepper over top.
Bake at 190 for 2.25 hrs. Drain fluids from loaf tin half way through.
Serve with steamed greens, tomato relish and whipped mashed potatoes.
Delish.

Chuck's Meatloaf Recipe:
_2 Lbs lean ground beef, ground turkey or meatloaf mix (ground beef and pork)
_1Small Onion (about 2 inch dia)
_1 Egg
_1/3 Cup Italian Bread Crumbs
_1/2 Cup Ketchup
_1/2 Cup Grape Jelly
Dice onion and mix with ground meat.
Blend grape jelly and ketchup together. You'll need to save half of it to cover the meatloaf when it is almost finished baking.
Beat egg. I know you hate doing it but its necessary.
Mix 1/2 jelly/ketchup, beaten egg and breadcrumbs into meatloaf mixture

Shape mixture into loaf. Place in baking pan, Corning Ware dish or whatever you have that will accommodate a 2 pound meatloaf in a hot oven. Add about 1/4 cup water to baking pan.
You should be able to tell whether it fits or not. If not, keep taking pictures.
Cover with foil and bake at 375 degrees for one hour.
Remove foil. Cover meatloaf with the remaining 1/2 of the ketchup/jelly mix and place back in the oven for about 10 minutes. Take care not to burn it.
Disclaimer: Your oven baking time and temperature may vary. I cannot be blamed if it all turns badly. My Kenmore is a dandy. Just keep an eye on it.
**For mini loafs, separate into two loaves and bake for 30 minutes. For smaller ones yet, separate into 4 loaves and bake for 15 minutes.
Any smaller, just use your toaster.

I used a combination of ground chicken and lean beef.

Assemble the ingredients:
4Tbs brown sugar, packed
1 c ketchup
2 eggs
1 c Bisquick
1 med onion, finely chopped (1/2 c)
2-3 lb ground meat (can use all beef or a blend of beef and pork, turkey, veal, or lamb)
Worchestershire sauce, salt and pepper
Mix brown sugar with ketchup. Reserve 1/2 c for topping.
For today's lunch at work, we pulled out some meatloaf that had been made for our in-house cooking demonstrations. But instead of simply having meatloaf, my coworkers decided to make this massive sandwich.
This fed four guys, quite well.
The meatloaf was sliced up and mashed onto the bread. We topped that with a generous layer of cheese and 6 fresh strips of bacon. I should mention that the meatloaf itself was originally made with a layer of bacon on top as well.
Top half of bread was toasted with olive oil and some garlic powder.
Our classic recipe for meatloaf makes the perfect dinner that hits the spot perfectly. Serve with mashed potatoes and vegetables of choice.
What makes dinner good? Meatloaf!
Two pounds of lean ground beef. Two large eggs. A heaping cup if freshly ground farmers market sourdough bread crumbs. A quarter cup of Temari soy sauce. A third of a cup of minced parsley from my herb garden. A teaspoon if minced thyme from the same garden. A cup of minced onion from the farm market. A teaspoon of minced garlic and a half teaspoon of black pepper. Made it into a loaf and smeared it with a half cup of ketchup. Baked at 350° F for an hour or so.
On the side was summer squash sautéed with onion and basil; and canned baked beans; and an assortment of olives. Iced tea to drink.
