My cooking isn't necessarily very photogenic, ha, but it is tasty! I generally make really simple (and cheap) dishes but I still think they are delicious. I never really properly learned how to cook, I just kind of freehand it, no measuring. Simple and goof-proof and VERY FAST because I am quite impatient!

White Chicken Chili is a tasty, convenient chili that is week-night easy. It has the added plus of a low fat alternative to the typical chili made with ground beef.

 

Makes 4 servings.

Prep Time: 5 minutes

Cook Time: 15 minutes

 

INGREDIENTS

 

1 tablespoon vegetable oil

1 pound boneless skinless chicken breasts, cut into 3/4-inch cubes

1 package McCormick® White Chicken Chili Seasoning Mix

1 cup water

1 can (15 ounces) white beans, undrained

Jim cooked the rice in his rice cooker. It has white rice with wild rice added. I microwaved some chopped onion and added it to the rice. I cooked the fresh asparagus in the microwave and sprayed with "I Can't Believe It's Not Butter." I sprinkled both sides of the frozen Tilapia with Chef Paul Prudhommes' Seafood Magic Seasoning Blend. Then I cooked the fish in the Xpress Redi Set Go for 3 minutes.

Total = 329 calories

 

This meal gets an A for nutrition.

Natural Products Expo West 2010 was in Anaheim, Calif., March 11-14. Gorgeous weekend, with palm trees swaying in the sunshine! This year's show had a record attendance of 56,000 from across the natural-products industry. It's even bigger than Expo East in the fall. (Go Anaheim!)

4 oz. Boston Butt roast (lean only) = 264 calories

2 tablespoons Mrs. Griffin's BBQ sauce = 30 calories

1 cup steamed broccoli flavored with lemon pepper, chicken bouillon granules, salt, and butter spray = 54 calories

1/2 cup whole kernel corn flavored with lemon pepper, chicken bouillon granules, and butter spray = 80 calories

Propel water for beverage (16.9 oz.) = 25 calories

Mini apple pies baked for a pie party. These use the traditional apple pie filling spiced up with some garam masala and are topped with toasted pine nuts!
