These candies from Specialty Foods Holding in Washington were made with natural coloring! Kathy Coy said it took them forever to get this bright red with fruit juices, but they managed to be the first to get this much color without any dye.

As delicious as it is healthy - low in fat and calories, high in fiber and iron, and great cold, warm or at room temperature.

There were lots of kid drinks on the floor this year, targeted at giving children less sugar and more options. This Fruit 66 product was a big hit with adults, too (as well as Laurie S.'s kids!) It was fruity, fizzy, and refreshing without tasting too sweet.

One of my favourite herbs! Stevia is about 30 times sweeter than sugar, with no calories or fat! Japan has been using it to as a non-calorie sweetener in its treats for decades. It's safe for anyone, and highly researched. Used over the long term, it seems to help with weight loss, hypoglycemia and diabetes; perhaps due to the chromium, or other assistance in the regulation of the pancreas.

 

It cannot nurture yeast or fill bulk in the batter for cakes and cookies since it has no bulk or caloric food value. So it can't be used as a direct sugar substitute. However, in the leaf form, it is extremely inexpensive and can impart its sweet flavour to water, oil, and alcohol. Put it in your tea instead of sugar or honey. Make your own infusion of sweetness and add directly to your recipes. Add to oil for sweet lip balms and cosmetics. Add to alcohol to create your own tinctures and concentrates. Feel free to experiment with this wonderful herb, and send in your recipes and projects!

This is a wide variety of fresh vegetables and fruits.

There were many snack products being shown this year, but Popchips may have won our hearts the most. The potato slices are actually popped (heat applied until they pop), eliminating fats or oils. Yet they retain an incredible crunch and taste. They come in all flavors and can be found now at Target and other stores.

Made with creamed Coconut milk instead of double cream.

Self-made,

Bake normal Sponge cake and cut in half /vertical.

Mouse made with

- creamed Coconut milk,

- Kahlua as sweetener

- a small amount of Butter

- 100% Cocoa powder

- Vanilla Essence

- Nutmeg

Everything can be mixed after your own taste. You can also add a little bit of Espresso

Place in Fridge until firm.

Put cake together after your own fantasy, using soft fruit or berries.

Decorating chocolate on top made with

- 100% cocoa ( a lot )

- melted butter

- vanilla Essence

- Icing Sugar or Honey ( a little )

So you have that dark chocolate taste.

 

ps. You also can put some Whisky or Rum on the Sponge cake layers for more moisture and taste.

Nicole really liked these omega-3 packets that you can add to your morning beverage to get your daily dose in. She said they taste like creamsicles! (She'll blog about these soon.)

Greek style roasted rutabaga with Yves ground round, adapted from The Healthy Foodie

 

300g chopped rutabaga

1 tbsp smooth Dijon mustard

2 tbsp water

1 tbsp lime juice

1 tbsp minced fresh thyme

1/4 tsp salt

1 tsp garlic powder

1/2 tsp onion flakes

3/4 tsp dried oregano

1/4 tsp smoked paprika

1/4 tsp chili pepper flakes

 

Heat oven to 375F.

Microwave rutabaga 4 minutes in a covered casserole.

Mix mustard -> pepper flakes in a small dish, toss with rutabaga.

Bake 25 minutes, uncovered.

*Optional* stir in ~1/3 cup Yves ground round or cooked ground meat, bake 5 minutes. Serve immediately.

 

*Update: This is awesome with Brussels sprouts or cabbage wedges too!*

I made this for my new diet. This udon soup has only 400kcal and it has some chicken and lots of veggies.

This guy was a big hit at the expo, walking around to promote a water ionizer that sanitizes with tap water. (Laurie S. did a blog post about this.) His costume was hilarious, though -- he kept hitting people in the head with his "nozzle head"!

1 cup chopped onion

5 cups water

1 cup uncooked medium egg noodles

My cooking isn't necessarily very photogenic, ha, but it is tasty! I generally make really simple (and cheap) dishes but I still think they are delicious.
