The Bidayuhs have a strong bond with their surroundings and it is not something strange to find local jungle produces making their way into our menu. Some of the common vegetations are ferns and tapioca leaves. These leaves are pound using large self or homemade wooden mortar. The semi pound leaves are mixed with minimal amount of wild boar or salted fish (and in recent times pork form the nearby towns find their way to our kitchen too) and cooked over low heat. In today’s urban lifestyle traditional made mortar are rare but the good old taste of mother’s or grandma’s cooking still tickles the taste buds thus, we improvise the present day tools to being back our yesteryears.
