Not taken care of in this photo, this griddle top is an easy keeper. Will clean easily using the scraper you see elsewhere in these pics
Last cook on this flat top, I poured some sugar over part of it, waited for the sugar to melt, then set endive cut in half on the melted sugar to cartelize it...after a bit I flipped the endive then poured red wine vinegar around the endive, for a glaze. the point of all this...the sugar left behind was a sticky gooey mess, so I poured some hot water on it, moved it around with the spatula I was using, and it was clean...easy keeper
So it has some patina on it. If I want it really clean before using, I'll get it hot, then pour a little oil on top (I like and use canola), and move that oil around with a pair of tongs, with a wad of paper toweling at the end of the tongs, then toss the paper towel in the waste can...same with cooking something that sheds a lot of grease (fat)...I'll soak up excess grease (fat) with paper towel, pick it up and move it around using the tongs, then toss in the garbage can I inevitably keep near when I cook on the griddle, when griddling fatty meats

We made lefse at my parent's tonight.
The proper lefse coloring should resemble your grandma's hands.
Our Norwegian relatives told us that we made the lefse too big. We used to make them almost dinner-plate-sized, and then fold them in quarters. None of our Norwegian relatives do this - they make them much smaller, pre-butter and sugar them, then roll them up, and then cut them in short nearly bite-sized pieces.
The small-diameter lefse are much easier to get from the rolling board to the griddle!

I spread a layer of Flax Oil on the griddle, then turned the burners on medium high, and left them on for 30 minutes, shut them off. the object is to build up a layer of seasoning. This grill top is cold rolled steel and will rust like crazy unless you season, just like you need to do with cast iron, as both steel and cast iron will rust if there is not a protective barrier on the metal
You can see in this pic where the grill is starting to get dark in a few spots, as I only had the heat on a few minutes at this point. Other following pics will show the progress of my seasoning attempts
Goods: sausages actually griddled, sandwich compiled using the crazy paving / sliced sausage technique, good soft bread, friendly.
Bads: Ketchup is generic and sweet, sausage quite non-descript, bad coffee.
