Former Restaurant first rebuilt by BR to Griddle configuration in 1965.
I could not find the circular cutter, so L had little Heart-shaped ones! xxx xxx hehehe!
To make them, a cast-iron girdle is best. It retains a lot of heat to cook them evenly. If you don't have one, a heavy frying pan perhaps. Previously cooked and mashed potatoes (with a little milk/butter, salt & pepper) and plain flour. That is, flour with no raising agent included.
Mix potatoes and flour 5:1 and about 10% butter. e.g. 250+50 flour+25 butter. Mix it all up and roll out to about 3mm. Cut out your shapes. Usually square or 1/4 circle, sometimes hearts! Have the girdle low-medium heat.
When they brown, turn over to cook the other side.
Often eaten with egg / bacon / sausages, but not many of these lasted very long... :-D
You may know the iron plate as a griddle or grill, but my Granny was from Midlothian so it's an iron girdle. Great for these, and pancakes!
Our basement had some pretty bad flooding due to the rain on 6/26/07. Many of our wedding presents were ruined, as well as 6 years worth of Carrie's school supplies, and also the original tapes (and digital master tapes) for Dancing With Gaia.

This was a prototype Bar Car that I photographed in service at Relly Mill (just south of Durham) on 12th July 79. It had separate bar and buffet counters and was built at Derby in 1968 (according to my first edition Platform 5 Coaching Stock Pocket Book.

So your mom doesn't make meatloaf for you anymore? Head over to the Princeton Diner, the College Park institution that spills over with fans. Then take a number and get in line. The morning crowd greets the day right with buttermilk pancakes, fresh from the griddle and crisp on the edges. And lunchers get fortified with gravy-laden blue-plate specials and fresh peanut butter pie. At least one reason people come back: The $5 portions that are embarrassingly large.
The faded "Enjoy Coca Cola" sign out front is a remnant from another era, as are the worn, 1940s-style stools at the Formica counter. Princeton Diner remains a crossroads for the neighborhood, so nickel-pinching office refugees are seated one booth away from old-timers who stroll in for their daily fix of soup and sandwiches. But once the seats fill up and the pace quickens, everyone gets treated the same. Don’t expect any frilly service while you’re waiting on that chili dog, friend.
Club sandwiches and patty melts are what sell, along with two-fisted "Dixie" burgers laced with bacon and barbecue sauce. Greek gyros and salads are about as ethnic as things get. And in the grand tradition of diners, sometimes the best thing on the menu is a special that was thrown together with leftovers, like the highly recommended corned beef and cabbage soup ($1.50). Other specials are such an iron-clad tradition, you can set your calendar by them. The standing offer on Thursdays is the meatloaf special ($5.50), braced with onions and juicy seasonings, based on an original Chicago recipe by co-owner Sue Hunter’s grandmother.
The lunch plates offer little adventure, but plenty of homey vibes. Chopped steak with grilled onions ($4.95) is tender, succulent and flavorful; team it with the whipped potatoes and beefy gravy. Other dishes are likely to be less satisfying, such as the lackluster grilled boneless chicken breast ($4.95) or the fried fish fillet ($4.75) that's fresh from a deep freeze.
No matter your choice, the soups are a worthy extra at $1.50 per cup -- the cream of tomato, in particular, is delicious. The house chili ($1.65) is not an award-winner, but it’s loaded with tasty beans and safely leans toward mild spiciness rather than aiming to blow your taste buds away.
Desserts are fairly good. Try the creamy homemade peanut butter pie ($1.95) or the apple pie dusted with cinnamon ($1.95).
Service was rushed and indifferent on one of our visits. On another less busy occasion, we received the sort of warm welcome that creates a crowd of regulars. But even with the inconsistencies and early closing time -- 3 p.m. weekdays, 2 p.m. Saturdays -- Princeton Diner doesn’t seem to be in any danger of losing its hold on College Park.

Kefir bread is one of the easiest breads ever! All you need is kefir and flour. This is my basic pizza and calzone dough, but it also makes a lovely flat bread when cooked on a cast iron griddle. I've never tried it, but other folks make baked rolls out of this dough too. The final product is sour like good sourdough, but you could cut the kefir with water or milk to make a milder dough. I wouldn't go below 50% kefir though, the kefir is the leavening agent.
Kefir Bread
2 cups dairy or non dairy kefir
Approximately 3 cups of whole wheat or white flour (I've never tried it with non-wheat flours - rye should work great but the gluten allows the bread to rise)
1 tsp salt
Pour the kefir into a big mixing bowl and gradually add the flour stirring with a wooden spoon. When you have added enough that the dough can be kneaded then switch to your hands and keep adding flour. Eventually turn it out on a floured board and knead 10 minutes (it's ok to stop and let it and your hands rest then resume later) or so until the dough is firm and springy. Pull the edges of the ball of dough down to make a tight ball.
Oil your cleaned bowl, put the ball of dough in the bowl and roll it around to get it all greasy. Cover with a towel and let sit overnight.
In the morning pull the dough out of the bowl, sprinkle 1 tsp salt over it and knead again until it is tight. It's best to give it another rise, but you could work with it at this point. If you let it sit then cover the bowl again and the next time you come back reknead it until it is tight again.
When you are ready cut and shape the bowl as you would like. This much dough makes 8 big sized or 12 small calzones or rolls, 2 big pizzas or 1 loaf of bread.
To make flat bread cut the dough into 8 or 12 portions and gently stretch into flat disks. Walk your fingers around the edge of the disk letting the weight of the dough pull the disk thinner. Working through the balls in succession and letting them rest between stretching works great. When they are stretched thin like pizza dough plop onto a hot, lightly oiled cast iron skillet or griddle. Bake until the bottom is browned, flip over and cook a few more minutes until the dough is cooked through. Serve with butter, jam, hummus, chili or any darn thing you want.

250g fresh tagliatelle
125g smokey bacon, cut into lardons
6 sprigs/needles of rosemary, chopped very finely
2 cloves of garlic, chopped finely
40ml of prosecco
3 egg yolks
60g Parmesan cheese, grated
ground black pepper
1 courgette
1. Cut the courgette into 1cm cubes. Rub with a little oil, add a little salt and grill in a griddle pan for about 5 minutes.
2. Mix the egg yolks with 3 T grated Parmesan cheese and black pepper and set aside.
3. Pan fry the bacon until golden brown and crispy.
4. Add garlic & rosemary and pan fry for another minute. Be careful not to burn the garlic.
5. Add the prosecco, let it reduce/vaporize a bit.
In the meanwhile cook the pasta to your liking.
Keep 1 cup of the cooking liquid before you drain the pasta. (very important!)
6. Add the drained pasta to the pan and mix with the bacon.
7. Take the pan off the heat.
8. Add the egg yolk-cheese mixture and toss.
9. Add some of the restraint cooking liquid to smooth the sauce.
10. Add basil and extra Parmesan cheese.

What originally started out as The Griddle System Hamburgers, today is known as Don Juans, located at 325 E Main in Grand Prairie Texas. Open. Originally opened as The Griddle around 1950, this eventually became Don Juan's in 1966.

We are in full pancake/crepe/blitz/crespelle making mode
I made about 30 sweet crepes with orange zest for blintzes to take as treats tomorrow at the munchkins school
and then I am making italian crepes for lunch....think flat manicotti

and i have another batch of crespelles fermenting, letting the gluten soften so i can make cannelloni/manicotti stuffed with spinach and ricotta for dinner under a roasted tomato sauce
I think the top crepe looks likea smiley face.....the sun is happy i am honoring her with all this milk and pancakes for candlemas....or pancake day or silly mom, or as my son calls me crazy.....he helped a bit and ate the rolled up one with homemade cinnamon applesauce and yogurt inside
