Traditional Welsh Cakes. Hand made and cooked on a griddle called a bakestone. Seen in Cardiff Market.
The first base burger: house chuck, griddled beef tongue, sesame aioli and pickled shallot. It comes with chips, but you can sub for fries or a salad. Hopscotch is a Japanese-America fusion spot which has an excellent brunch menu.

Tortilla (Peninsular Spanish: [toɾˈtiʎa]; Mexican Spanish: [toɾˈtiʝa]; English: /tɔrˈtiː.ə/) means "little torta" in Spanish, and refers to several different foods eaten in various Spanish speaking countries and parts of the United States. In Mexico, Central America (Guatemala, El Salvador, Honduras, Nicaragua, Costa Rica, Panama) and the United States, "tortilla" refers to a flatbread made from corn or wheat originally made by Mesoamerican peoples. In Spain, South America, Cuba, and Puerto Rico, "tortilla" refers to an omelette, with variations that can include vegetables such as onions and potatoes.

After only 5 minutes, its done. The dough recipe I've settled in on is:
125-150 ml 105 degrees F water
2 teaspoon Active Dried Yeast
1 teaspoon sugar
200 grams King Arthur Italian Blend Flour
50 grams All Purpose Flour
1 teaspoon salt
1 teaspoon Ajwain
1 Tablespoon Olive Oil
Bloom the yeast in the water and sugar for 15 min, then add to the remaining ingredients. Mix together with a fork, then knead in a stand mixture with the hook attachment for 5 min. Remove from the hook, form a ball, coat the with olive oil and let rise for at least an hour or until the dough doubles in size. Split into 2 dough balls and cover in plastic wrap and refriderate for minimum of 1 hour or up to a day. Dough makes two 9-10 inch crusts.

A famous takoyaki/okonomiyaki spot in Dontonbori is Creo-ru. My brother and I had the okonomiyaki special (which was oyster) and another with shrimp. In this video, you can see how the bonito flakes "dance" when heated.
Named after entrepreneur Yasui Doton who wanted to connect sections of the Umezu and Yokobori rivers to increase commerce, his work didn't come to fruition until many years after his death. In 1662, Dotonbori became an impressive theater district with several kabuki and bunraku venues. Today, it is mainly a restaurant and entertainment district known for it's elaborate lights and visuals.

I expressed an interest in making oatcakes and my aunt gave me her mother's (mother's mother's...) girdle, or "griddle" as it is known elsewhere. I hope I can do it justice.
Sooooooooo sketchy. In fact, when we were having breakfast the dude at the next table only had a beer. Before noon. Still, I've never had a better pancake.
The secret to bacon that doesn't curl is to cook it low and slow.

Original caption: Pour batter onto a griddle and watch the mixture spread out into a round-shaped pancake. The movement is similar to the flow of piedmont glaciers, which form when ice spills from a steep valley onto a relatively flat plain. These glaciers are known for their nearly symmetric, fan-shaped lobes.
The shape of Greenland’s Elephant Foot Glacier, for example, is so distinct that it stands out dramatically from its surroundings when viewed from space. The Operational Land Imager (OLI) on Landsat 8 acquired this image of the glacier on June 21, 2014.
“Elephant Foot is an excellent example of a piedmont glacier,” said NASA scientist Tom Neumann. “In fact, it is often used as the example of a piedmont glacier because it is so symmetric.”
Located in northeastern Greenland on the Kronprins Christian Land peninsula, the glacier is not connected to Greenland’s main ice sheet. Rather, it’s part of a network of glaciers and ice caps that pepper the periphery of the island. Research has shown that as a whole, these outlying glaciers and ice caps account for 5 to 7 percent of Greenland’s total ice coverage, but they are responsible for 20 percent of its contribution to sea level rise.

Crispy fried chicken slathered in Calabrian chili oil and dusted with red pepper flakes and our special blend of spices. Served on a griddled bun with smoky mayo and crisp pickles. ($12.75 as photographed, with added bacon, cheddar, and slaw)
Ours was a 'destination trip' to Nan's Rustic Kitchen & Market and this sandwich, and our entire experience there, was excellent.
An update to this post is that we have been to Nan's in Southborough three times now, and have bought six such chicken sandwiches. Each one, was a work of art!

In Mexico they are griddled, then stuffed with whatever you want; in the El Paso/Las Cruces area, they are deep fried and almost always stuffed with a peppered ground beef filling; elsewhere, Taco Bell has ruined the word gordita!
Griddled naturally raised meats including steak and pork from Oliffe's or chorizo sausage heaped on a toasted bun with mashed avocado, mayo, tomatoes and homemade hot sauce.
