With the recent addition of wheat to Joe's allergy repertoire, I decided to attempt gluten-free vegan pancakes. These turned out well! I whipped up the batter in the VitaMix using sorghum flour, brown rice flour, flax/chia seed meal as the egg substitute, baking soda, baking powder, hemp milk, vanilla, a little agave syrup and sea salt.
