One of mr Liz's workmates is allergic to gluten, so I have been making her gluten-free treats as well as sending the guys regular-flour cookies.
Lovely Ulli sent me a recipe for gluten-free kolasnittar, and they've just come out of the oven. They taste heavenly!

Salad with Grilled Chicken and Blueberries
Mixed greens - baby greens and herbs
Honey roasted sunflower seeds
Fresh blueberries
Sliced grilled chicken breast
Sliced green tops of scallions
Vinaigrette
Blueberry Vinaigrette
2 Tbls olive oil
2 Tbls blueberry balsamic vinegar
1 Tbls honey
salt and pepper
Put in a jar with a tight fitting lid and shake, shake, shake. (do a little dance at the same time - it's fun!)
in honour of Jeffrey Coolwater I added sundried tomatoes and black and green olives. It came out perfect this time I can definitely have pizza this summer. yay!
