Very refreshing, full with raw vegetables this modern-day Gazpacho never disappoints.
Ingredients:
650g (about 6-7) ripe tomatoes, destemmed and quartered
1 cucumber, cut into chunky bits
1 small onion (or ½ a big onion), quartered
2 red bell peppers (or 1 red and 1 green bell pepper), deseeded and cut into chunky bits
1-2 celery stalks, cut into chunky bits
½ ts minced fresh red or green chili, or jalapeno, optional
2 TS balsamic vinegar
2 TS olive oil
1-2 TS lime juice
Sea salt – Fleur de Sel would be great, to taste
Pepper, to taste
Directions:
1. In a food processor add vegetables in batches and process for about 2 minutes until everything is smooth and with small bits and pieces. Pour mixture in a large mixing bowl and repeat until finished.
2. Add vinegar, olive oil, lime juice to the soup and season to taste with fleur de sel and pepper. Stir everything to combine. Serve as is or slightly chilled by refrigerating the soup for half an hour.
Leftover T-Giving roasted turkey, quinoa with orange and parsley, apple cranberry sauce and garlicky kale.

Yum! Another cauliflower crust pizza. This time I sauteed the grated cauliflower before mixing it with spices, egg, and cheese. Formed the crust, baked for 30 minutes, added toppings, and broiled for 5 min.
Although it was a buffet, the waiter was happy to bring me GF eggs Benedict and Mickey waffles. Yum!
Tonight I'm making a gluten free, and egg free pizza crust. I built a compost bin in the snow, and am cooking something that needs to rise. I'm taking this down home thang seriously!
