Another iteration... glutenfree brownies with no eggs or dairy! I like my brownies a little more on the cakey side, so was looking to counter the tendency to be really gummy. I'm really happy with this round, which has enough structural integrity to accommodate about 1 cup of chocolate chips (should you choose to add them!). The are nice and moist, and taste quite chocolately without sticking to the roof of your mouth.

Variation: I added 1 tsp instant coffee to the dry ingredients. I'd like to hear about, or, better yet, taste other variations to the traditional oreo. Other flavors I'd like to try: orange, mint, chili, almond. What's your fave?
GF crust made with brown rice flour, tapioca flour, shortening and ice water. Sauteed crimini mushrooms layered with finely cut spinach and white sharp cheddar cheese and held together with 6 beaten eggs with some Johnny's garlic seasoning.

Tomatillo Salsa:
1lb fresh tomatillos, husks removed and quartered
3 cloves garlic
1/2 cup fresh cilantro
1 jalapeni pepper, seeded
1 fresh cayenne pepper, seeded
1/2 tsp salt
1/2 red onion
Blend everything in a food processor
Chop 1 red bell pepper, 2 Japanese eggplants or 1 small eggplant), and 2 small summer squashes. Heat up a pan, ad vegetables, tomatillo salsa, and some water. Heat until vegetables are cooked through, about 20-30 minutwes, adding more water if neccessary.
