Anyway, I was about to complain about this recipe for making altogether too many dirty pots and pans. Then I tried it.

Today was gluten free day at the fish and chip shop near my parents' so we had to partake in a portion for lunch. Best lunch I've had in ages!

A crustless quiche I made for a brunch meeting that I had to attend today.

 

Crustless Aztec Quiche

 

4 eggs

1 1/2 cups milk

2 cups shredded cheese (I used cheddar this time)

1/4 c diced fire roasted Hatch chiles (or a small can of diced green chiles)

1/4 tsp cumin

1/3 c gluten free baking blend

pinch or 2 of salt

 

Mix well and pour in to a buttered dish. Bake at 350º for 45 minutes or until the edges are golden and the center is set.

 

I like it with thick slices of fresh tomatoes!

Pancake "batter" consisted of 1 banana, 1 egg, and a scoop of almond butter. Buzzed that in the Vitamix and cooked in coconut oil over medium-low heat. (They're delicate; you need to cook 'em gently.)

 

Yogurt isn't completely primal; it's Chobani 2% Passionfruit, but I'm sick so to heck with you, buddy! It's delicious. The berries are from a local farm. Yum.

My first GLUTEN FREE gingerbread man. I am so proud!

Using a gluten-free base topped with tomato puree, pesto, red onion, red pepper, mozzarella cheese, and olives

lemon & herb marinated free range chicken with fries and a side of cucumber, tomato and basil leaves

Grilled shrimp marinated in a garlic vinaigrette with onions, tomatoes, serrano peppers and Yucatan pico de gallo.

Nestled in with the overblown vegetables, this veritable lushenss, the dusty purple, the striated leaves -- coleslaw waiting to be born.

i baked these for work, using gluten-free cookies for the crusts. these aren't quite a well-posed cake glamourshot (my coworker kindly gave me her partysnap).

the relatively small group present ate them both fairly quickly. i was impressed. the recipes were from cook's illustrated (lemon cheesecake) and the other was from food & wine. www.foodandwine.com/recipes/double-chocolate-peanut-butte...

the lemon cheesecake was suprisingly light, and the chocolate peanut butter pie was pretty much a giant peanut butter cup.

Homemade chicken fingers(one more hidden under the cheese cubes), variety cheese cubes, Japanese style mashed potato salad and cranberry raspberry applesauce.

Hi all - at least one of the contaminants in the pet food was 'Aminopterin' which is a substance used as rat poison in some countries (not the US according to what I've heard on the news so far). The news piece I heard said that the wheat gluten was the suspected source of the poison. The wheat gluten came from China. THEY ARE NOT CERTAIN WHETHER OR NOT THE CONTAMINANT MADE IT TO THE HUMAN FOOD SUPPLY.

 

It is a good time to have a gluten free diet.

 

The radio bit I heard interviewed the CEO of Menu Foods who said that all cuts and gravy style foods are being recalled regardless of manufacture date.

 

One article I found on the web. I'll look for more. No new press release from FDA or Menufoods or any other food company yet.
