From a recipe by Glutenfree Homemaker. Oh My goodness! They turned out so good. Nice and soft with enough firmness to hold up to a burger and all the fixens. I even made ham and egg breakfast sandwiches this morning. Yum!

Typical lunch salad with mango tomato dressing

Serves 2 VERY hungry people or 3 moderately hungry people.

 

Have Ready:

1cup of dried rice noodles, ½ cup spinach and ¼ cup diced mushrooms

1 recipe Chili Dumplings (recipe follows)

1 Recipe Sweet Peanut Sauce (recipe follows)

1 recipe Roasted Vegetables (recipe follows)

½ red pepper cut into 1 inch squares, ½ cucumber cut into thick slices, 1 plum tomato cut into thick slices and ¼ cup chopped pine nuts.

½ of an onion, minced.

 

Chili Dumplings:

½ cup of chick pea flour, 1 tsp. Chili powder, ½ tsp crushed chilies, ½ tsp. Baking soda, 2 tbsp oil, 1/3 cup of water, and ½ of an onion, minced.

Mix all of the above ingredients except for the oil to form a dough. Add more flour or water if necessary. Roll the dough into small balls, approx 1tbsp of dough each. Get some extra flour aside on a plate and coat the balls.

Heat 2 tbsp of the oil in a pan and add the dumplings, heat until browned all over.

Sweet Peanut Sauce:

Combine 3 tbsp peanut butter, 1 tbsp maple syrup, 1 clove garlic, 1 tsp of fresh ginger, 1 tbsp brown rice vinegar and ½ cup of water. Combine in a blender until smooth.

Roasted Vegetables:

1 broccoli crown, sliced into quarters, ½ red pepper, and 1 carrot sliced into quarters.

Heat the oven to 400˚F. Line a baking sheet with parchment paper, and spray the vegetables with cooking spray. Roast the vegetables for 15 – 20 minutes.

Let cool for a few minutes and chop into bite sized pieces.

Noodles:

Cook the noodles as directed with the spinach and mushrooms. Strain and set aside.

Assembly:

Mix the noodle mixture and 1/3 of the sauce together.

Mix the roasted vegetables, ½ of an onion minced, and another 1/3 of the sauce together.

For serving 2 people, cut everything in half, for 3 people, cut everything into thirds.

In a medium sized bowl fill with ½ of the noodle mixture so it fills it 1/3 of the way and ½ of the veggie mixture so it fills it another 1/3 of the way.

Lay ½ of the dumplings over top. Arrange the cucumber, tomato and sweet pepper over top. Add the pine nuts and drizzle more sauce over top.

 

Leftover white sauce, chicken sausages, and baby spinach tossed together and stuck in a pie pan and baked until bubbly. Yum.

These easy falafels are the real deal, golden and crispy on the outside and soft on the inside. They're best enjoyed in a salad pita and tahini sauce.

It isn't a big surprise that tater tots would be GF (although sometimes I'm astonished at what they *do* manage to add gluten to) but I was pleased and surprised to find the No GLT icon on these store-brand tots.
