Gluten-free mozzarella, tomato and pesto panini sandwich from Risotteria in Greenwich Village in New York, NY. 4/28/12
My BFF at work and fellow rock-nerd will no longer be my work-spouse (she's moving to a different job), so I wanted to make her something special.
So they didn't turn out as perfectly as I'd envisioned, and some are more just minerals and rocks than specifically geodes, but... well, this one resembles a calcite and rose quartz geode.
The cupcakes are gluten-free honey-vanilla cake, iced with a combination of vanilla frosting, various decorating sugars, and edible glitter. (I really wanted to use some pearl sugar but couldn't find any on short notice. Boo.)
Beetroot with Greek skordalia sauce is a classic Greek dish that's so simple yet to die for. Skordalia is a garlicky dip that complements sweet beetroot super well.
We went to a party in Bristol where about 80% of the party nibbles were gluten-free. (I should add, they were also all home-made and absolutely delicious.) For once I was able to pig out!

It may not look like much in the pan, but you have NO idea how good this tastes. It's even better when the slices are smaller, but we ate those before I could take a photograph....

Gluten free: ground almond with millet flour.
But not dairy free, this contained butter, sour cream and yoghurt. Decorated with cream, pink smoker lollies and piped royal icing pink daisies.
A pie some people made for me. I liked the contrast on the edge of the counter with the tile-like flooring..
This is my first attempt at making butter pecan cookies. The idea is to make a buttery shortbread/sugar cookie and top it with a pecan praline.
These came out pretty well, but I'm not sure I'm completely thrilled with the result. I want to try something else. Stay tuned. :)

Serves 2 VERY hungry people or 3 moderately hungry people.
Have Ready:
1cup of dried rice noodles, ½ cup spinach and ¼ cup diced mushrooms
1 recipe Dumplings (recipe follows)
1 Recipe Basil Pesto (recipe follows)
1 recipe Roasted Vegetables (recipe follows)
½ cucumber cut into long wedges, 2 plum tomato cut into long wedges
Dumplings:
2/3 cup of chick pea flour, 1 tsp. Chili powder, ½ tsp crushed chilies, ½ tsp. Baking soda, ¼ cup corn kernels, 2 tbsp oil, 1/3 cup of water and a dash of cilantro.
Mix all of the above ingredients except for the oil to form a dough. Add more flour or water if necessary. Roll the dough into small balls, approx 1tbsp of dough each. Get some extra flour aside on a plate and coat the balls.
Heat 2 tbsp of the oil in a pan and add the dumplings, heat until browned all over.
Basil Pesto
1/4 cup pine nuts, ¼ cup olive oil, 2 cloves garlic, ¼ tsp salt, 1 spring fresh basil, ¼ cup water.
Puree all ingredients in a blender.
Roasted Vegetables:
1 broccoli stem, sliced into quarters, 1 red pepper sliced in half, ½ an eggplant and 1 carrot sliced into quarters.
Heat the oven to 400˚F. Line a baking sheet with parchment paper, and spray the vegetables with cooking spray. Roast the vegetables for 15 – 20 minutes.
Let cool for a few minutes and chop into bite sized pieces.
Assembly:
Mix the rice and 1/3 of the pesto together.
Mix the roasted vegetables and another 1/3 of the pesto together.
For serving 2 people, cut everything in half, for 3 people, cut everything into thirds.
In a medium sized bowl fill with ½ of the rice mixture so it fills it 1/3 of the way and ½ of the veggie mixture so it fills it another 1/3 of the way. Line the tomatoes and cucumber’s around the rim of the bowl, and place the dumplings into the middle. Pour some of the remaining sauce over top.
