I've developed an intolerance to gluten, so when I heard BabyCakes (a vegan gluten-free bakery in NYC) came out with a cookbook, I was sure to snatch it up. These are the brownies. Unbelievably moist, light and delicious. Will definitely be a staple in the house.
With blue corn chips, guacamole, and olives. Recipe is over in my Recipe Box.
It's so great to come home from a busy day to a hearty meal waiting in the crock pot!

I was really trying to use the setting sun to make the Chicha glow and accomplished that, but was hoping that it would come through the glass more than it did. Perhaps the Chicha was too dense to let the amount of light I was hoping for through. I like the way the lighting shows a range of colors in the glass, and was particularly pleased with the sparkling sun across the top. The framing of the photo I'm not particularly pleased with, but I have not yet nailed down why.

Unfortunately it fell a bit in the middle, a common problem with gluten-free baking. Getting nice domed tops takes a bit of work, but I'm getting better at it!
This is the hamentashen I made -- it is gluten free. The dough didn't hold together as well as I liked, but it's not too bad. Daniel liked them! Kind of a sugary, bolusy snack...
Made using the vegan cupcake book recipe, I baked these gems for Madi. Instead of obtaining quinoa flour, I substituted the generic Bob's Mill gluten-free flour blend. I also used peppermint extract rather than almond. So, it's nut-free too! I'm all about the crazy food coloring frosting.
I made a variation of this recipe last night
Instead of red pepper paste, I used chilli powder. And instead of burghul, I used quinoa.
Yum.
Well, if you live with a celiac, and all he eats for lunch is cheese sandwiches on gluten-free bread, and the only kind of gluten-free bread he likes is the frozen sandwich bread from Whole Foods, and Whole Foods almost never has gluten-free sandwich bread in stock -- well, finding six loaves in the freezer case at one time is quite a score.

Just the primary frosting...and then my daughter decorated. Ah well. We ate it with messy frosting and all.
Ingredients:
100g Doves Farm Bread Flour
pinch of salt
1 rounded tsp gluten free baking powder
1x 5ml spoon ground ginger (1 tsp)
25g margarine (sunflower spread)
25g sugar (caster or granulated)
1x 15ml spoon Golden Syrup (1tbsp)
1 medium free-range egg
Method:
1. Mix together flour, salt, ginger and baking powder
2. Rub in margarine until like light breadcrumbs, then add the sugar and mix with a metal spoon.
3. Lightly beat the egg to combine, transfer to the dry ingredients and partially mix in with a wooden spoon
4. Add the syrup and mix well until smooth
5. Place mixture in a greased 500ml pudding basin
6. Cover with greaseproof paper or foil and steam for one-and-a-half hours
Serve with hot custard. %^P~
