Just the primary frosting...and then my daughter decorated. Ah well. We ate it with messy frosting and all.
Ingredients:
100g Doves Farm Bread Flour
pinch of salt
1 rounded tsp gluten free baking powder
1x 5ml spoon ground ginger (1 tsp)
25g margarine (sunflower spread)
25g sugar (caster or granulated)
1x 15ml spoon Golden Syrup (1tbsp)
1 medium free-range egg
Method:
1. Mix together flour, salt, ginger and baking powder
2. Rub in margarine until like light breadcrumbs, then add the sugar and mix with a metal spoon.
3. Lightly beat the egg to combine, transfer to the dry ingredients and partially mix in with a wooden spoon
4. Add the syrup and mix well until smooth
5. Place mixture in a greased 500ml pudding basin
6. Cover with greaseproof paper or foil and steam for one-and-a-half hours
Serve with hot custard. %^P~

Sorry for the poor photo, I was in a bit of a rush, these were just some of the cupcakes I made for my "Hens" night.
Banana bread. The toaster oven was too small for it, and burned the top, so I had to transfer it to the big oven partway through baking. It turned out surprisingly tasty even so.
The night I first baked these, I took them right from the cooling rack, drove them to the restaurant, walked in, and put one in the mouth of the Chef. His eyes grew wide, and he said what he always does when food really moves him, "F --- me running!"
Success.

I went nut crazy today. Flour used includes Almond flour, Hazelnut flour, Sunflower seed flour, Oat flour, buckwheat flour and teff flour. It smelled like ice-cream when mixing, because of the hazelnut. I added a whole cup of mixed nuts.
I have a new blender that can pulverize nuts and seeds. So I'm planning to try sesame seed flour soon. I'd use fewer types of flour for my next bread. Today was an overkill. The calorie count per slice of bread is likely pretty high.
The bread break easily. Too much liquid? Too much mixed nuts?

I made this one with almond meal in place of the flour. Sooooo yummy. mmmmm... I just received an apple peeler-corer-slicer, so we're about to make some more!
