Ingredients

VOLUME

5 1/2 cups brown or white rice flour (or a combination of both)

1/2 cup sweet rice flour

2 cups potato starch

1 cup tapioca flour

OUNCES

1 lb. 11 ounces brown or white rice flour (or a combination of both)

3 ounces sweet rice flour

11 1/4 ounces potato starch

4 1/4 ounces tapioca flour

GRAMS

755 grams brown or white rice flour (or a combination of both)

84 grams sweet rice flour

321 grams potato starch

119 grams tapioca flour

Now that we have figured out the right ratio, the right flours, the right ingredients, we can have fresh, homemade pasta in 20 minutes, start to finish.

My first gluten free baking attempt. Pumpkin bread made using homemade unsweetened applesauce in liue of fats. Came out great, if a little deflated looking.

Quinoa with Earthbalance Spread, steamed carrots, swiss cheese slice, all-natural mild Italian chicken sausages and green beans with garlic olive oil.

Bit doughy, but rose better than the potato scone recipe it was based on.

Not the greatest picture, but at least you get the idea. :)

 

2 cups cooked black beans

1 cup chopped onion

1 ½ cups diced sweet potato

3 cups chopped kale

1 ½ cups chopped fresh tomato

2 red bell peppers, diced

1 cup frozen corn

½ cups chopped fresh cilantro

1 tsp paprika

½ tsp cumin

¾ tsp dried oregano

½ tsp chipotle chile powder

¼ tsp crushed chile

1/8 tsp ground garlic

Salt, to taste.

Salsa

In a pan, throw in the onion and sweet potato. Add about 1 to 1 ½ cups of water. Bring to a boil. Cover and reduce to a simmer. Let cook for about ten minutes. Add the kale, tomatoes, beans, pepper, and spices. Cook for about ten more minutes, or until the potatoes are cooked through. Add the frozen corn and heat through. Top with chopped fresh cilantro and add salt to taste.

You have several serving options:

1)Serve over cilantro-lime rice, and add salsa to taste.

2)In tacos with salsa and salad.

3)Or wrapped in a tortilla with some salsa added for a nice burrito.

 

Home Icecream are going to love me by the end of this pregnancy.

 

It's gluten free, and since I've been able to tolerate milk/lactose these past few months - I can eat one of these a day (and I probably would if I lived near their delivery route..).

This is one of my all time favorite soups. It's usually made with onions, carrots, sweet potatoes, tomatoes, and peanuts or peanut butter. Here I've replaced the peanut butter with sunflower butter.
