we had been keeping up with the tomatoes well this year, so far. but all of a sudden there is a glut. ...and there will be another one in a week or so,
Gluts are great as long as you have the freezer space to utilize them and my love of gluts is the reason I have 2 chest freezers in the garage.
So I roasted these today and made 6L of pasta sauce mostly using stuff I had grown. We do this every year, sometimes twice and freeze it in containers. A taste of the summer during winter.
My recipe/ingredient list:
quantities/ratios flexible within reason
A load of tomatoes - slow roasted for 4 hours @180C
big onions (home grown)
Green peppers (home grown)
parsley (hope grown)
Courgettes (home grown)
Garlic - loads - a couple of whole heads
Roast red peppers - jar (from Lidl)
2 jars of pitted olives
Good olive oil
Black pepper - no need for salt the olives bring lots of it.
everything cooked slowly for hours then blitzed with a blender.
Camp Fire, Colour ot the flame came from copper based chemicals. You can buy them in small packs called "Mystical Fire".

(034/365) A jar of spicy tomato chutney. For Smile on Saturday theme "made by me". I made at least 20 jars of this last Summer when we had a glut of homegrown onions, garlic, tomatoes, chilies & courgettes. The only ingredients not homegrown were the sultanas & spices. Perfect on a cheese sandwich or to accompany cold meats HSoS!

'Matryoshka' or 'Nesting-Dolls', those fascinating Russian souvenirs, reminded of that anyone? Those similarly-angled, receding slopes couldn't be ignored. As was the case for most of that day, the light was also very accommodating. I love the shadow of Beinn Odhar creeping up Beinn a' Chaisteil's flank, in this. The 'problem' for me, afterwards, was picking out the best images from a very good batch, such was my good fortune.
In an uncharacteristic nod to the endeavour of Victorian engineers, I included one those amazing railway viaducts that miraculously curve their way around the glen-foots of Gleann Achadh-innis Chailein & Glen Coralan. The West Highland Line has many a story to tell & is quite simply epic in its choice of route. Who cares if the trains go at a snail's pace? All the better for viewing the Highlands properly in comfort, rather than having them speed by breathlessly.

Spotting Mandy's strawberry, I checked Macro Mondays theme, and decided to join in again after many missed weeks.
This is one of a glut of apples our neighbours are putting out in a wheelbarrow for all to take. I plan to make it into some chutney, as I don't have any green tomatoes to make the recipe that has served me well over the last 2 years.
There seems to be a glut of explorers in the UK at the moment on a desperate rush to see euro 'classics' , yet right before them lies a plethora of hidden gems just waiting to be discovered. I can not believe the sheer amount of places and thngs we saw over the last 3 days and our list of places to look at won't be depleted for quite a long time to come.
Here down a delightful lane pretty much hidden away lies an old house. Inside we were amazed at the sheer amount of items left behind, practically every box , drawer , cupboard and wardrobe was full, with tiems from the late 1800's to around the 1950's.
We only covered 3 rooms in 4 hours. We will return to see the rest, as there is far far more to uncover and see here.
Last day of freedom before a huge glut of work so we took a little drive out into the country to chill out.

I had a somewhat easier task picking today's image out after yesterdays glut of duckling images, there were only 3 contenders today so a somewhat quicker selection process.
Usually around Dunmow we have a lot of rapeseed growing, this year, not so much, unless of course it's late. It was a very pleasant early morning walk today and this view is always a good one to take with the added interest of the rapeseed.

The Kolapore Uplands contain a myriad of trails that vary from a casual stroll to a more deliberate route, which is apparently chosen to test the viability of your quads and glutes - or so it seemed after 10 kilometers of up and down on the escarpment. It's been a while since we've been hiking and I felt those muscles for three days afterwards. Even so, I can't wait for the weather to clear so we can get on the next section.
assorted varieties. We have a bit of a glut at the moment so these are destined for slow roasting and then being turned into pasta sauce for the freezer.

The sky turned into intensivly glowing red yesterday evening, as I took a walk in the forest. What a performance!
The date - March 19, The place - The Lehigh Gorge Rail Trail. The temp. 74 degrees!!!!!!!!!!!!! A month earlier than normal. Off we went!!
Unfortunately, the path wasn't refurbished. So we had a "washboard ride" . Our "glutes" were hurting, but it soooo nice to get to it again. We did 12 of the 26 mile run!!!
