about 2/3 head of garlic, one medium-large yellow onion, a large green bell pepper, three jalapenos, and about 2/3 of a 28-ounce can of diced tomatoes (added in that order) to some olive oil with cumin and coriander seeds and some black pepper and oregano.

Yesterday I made a Boston Cream Pie from scratch for my girls night at Libby's house. I had no idea how much work it actually was. It definitely wasn't as easy as I thought it would be, but it turned out pretty good.

Diced chewy caramels topped the homemade apple pie filling in these mini Pop Tar-esque pastries. A few of the seals weren't perfect - as you can see!

Espresso and walnut cake from Julian Day's book Classic Artisan Baking, frosted with a homemade ricotta (yep, I made the made the ricotta too)-mocha frosting and dusted with cocoa.

Can you have a frosting problem? Like, too much frosting? Or making frosting too often?

 

Just having some fun trying my hand at liquid soap making. Started yesterday and finished it up today. Scented with tangerine essential oil, which also gives it that nice amber hue.

 

Finished soap in jars ready to be sequestered. It will be ready in about two weeks. The soap should become clearer and thicker as it cools and sits. I am loving the color and the tangerine scent!

 

First time making these. I shook them in powdered sugar in a bag, which changed the shape of them to a more rounded look. Next time, I think I'd just let them air dry without shaking them in the sugar, to preserve the shape.

 

That said, however, they taste amazing.

That frosting tho... just a block of firm tofu thrown in a food processor with a pyrex full of melted chocolate chips, a couple scoops cocoa powder & brown sugar, molasses, vanilla extract and a sprinkle salt. No real recipe, just kept on tasting and adjusting... and tasting... and oops need to leave some for the cake, you know. (Thankfully this makes a LOT).

There is enough fresh nutmeg in here to impress yourself. Also, those two little blueberries lying gorgeously on the plate? Fell out by themselves when I took that first piece out. Talk about a cooperative subject, huh?

Finally remembered not only small tortillas, but local corn ones at that.

Sriracha & pepper jack/cheddar & spicy sweet potatoes & savory plantains & homemade guac & lightly dressed tomatoes + arugula, paired with a scratch-made margarita on the rocks with a lime zest salted rim.

 

Have I mentioned recently that holy crap I love food?

I grew up in Colombia, South America. I really enjoy Colombian cuisine and Mr Chiots has grown to love it as well. One of our favorites is Empanadas. Empanadas are eaten in many Latin American countries, and each country has their specialty, as does each region within each country. I grew up in the prairie region of Colombia so I make mine the way they do there. I use areparina for the crust which is pre-cooked corn flour, I can’t find it locally so my dad brings it to me when he travels back from Colombia. In many other countries empanadas are made with a pie crust type dough, or a potato dough.

I've blogged about my home canned tomato soup many times. It's one of my most popular posts, people are always writing asking the recipe and telling me how much they love the soup. It's one of the few things I can every year without fail. The first year I canned only 30 pints of it and it was gone way too soon. Last year I did 31 quarts and 7 pints and we only have 2 quarts left.

 

I use an old Squeezo to make my soup, this one was handed down to me by my mom. It's the one we used for applesauce & tomatoes growing up. It's a relic but still works great, and I love that it doesn't have any plastic parts. I love pulling it out, I even use the same block of wood on the counter that we used growing up.

p.s. Romaine has the best texture when cooked. Almost crisp, firm stalk attached to spinach-like smooth, wilted leaves? MmmHmm!

You know those gigantic chocolate chocolate-chip muffins they sell at Costco? I miss 'em. I made a vegan version with a mini bundt pan, chocolate CHUNKS and a sprinkle of sea salt. Take that, Costco!
