we made the seitan "bacon" like this:
first you make seitan out of gluten flour and same amount of water, include spices. when you have mixed the two, make a thin pizza-like dough out of it, then cut it into thin slices. place the slices on a baking sheet and drain well in bbq sauce. place in oven 15 minutes, and then turn the slices. they are supposed to be 15 more minutes in the oven, but we just placed them on the pizza as it was still going to be in the oven for a while.
the devil's sauce is my mothers recipe and the pizza turned out real good.

One of the nice things about the Disney book is that with some of the simple recipes, they'd list "variations." I learned early on that you can "play" with recipes and make changes and use a basic recipe to get lots of different things.
