I love having Refreshing Chicken Wraps For Lunch or as a light dinner. They are very refreshing, plus it gives me another way to use rotisserie chicken in a recipe. Mom’s love wraps, they are neat and compact. Beware though…these can be a bit messy ...

Basically Alton Brown's rub recipe with a few small modifications that may or may not improve it.

 

* 8 tablespoons light brown sugar, tightly packed

* 3 tablespoons kosher salt

* 1 tablespoon chili powder

* 1/2 teaspoon ground black pepper

* 1/2 teaspoon cayenne pepper

* 1/2 teaspoon jalapeno seasoning

* 1/2 teaspoon Old Bay Seasoning

* 1/2 teaspoon rubbed thyme

* 1/2 teaspoon onion powder

 

is his, and I didn't have any jalapeno seasoning and don't react well to cayenne so:

 

* 8 tablespoons light brown sugar, tightly packed

* 2 tablespoons kosher salt (dont want that much salt, hopefully doesn't screw up the rub)

* 1 tablespoon chili powder (used 2 tsp chili powder and 1 tsp ancho chili pepper)

* 1/2 teaspoon ground black pepper

* 1/4 teaspoon cayenne pepper

* 1/4 teaspoon cinnamon

* 1/2 teaspoon smoked spanish paprika

* 1/2 teaspoon Old Bay Seasoning

* 1/2 teaspoon rubbed thyme

* 1/2 teaspoon onion powder

 

Quick recipe to blend your Tandoori masala : garam masal, powdered ginger, chilipowder and salt.

Shrimp basted with coconut/mango sauce and grilled on with yellow peppers and onion.

Baked seasoned fries. Tossed in olive oile and seasoned with cumin, chilipowder, garlic, salt and pepper and baked at 400 for about 35 minutes, til golden.

Just empty and add liquid! I made this before. Only this time I'm packing it so the whole dish will be ready to cook track-side at Montreal's F1 race track!

These Sweet Potatoes turned out great. The trick in making these is to make sure the potatoes are super dry before putting them in the oven.

Put al the vegetable in it and let it bake.

I don't prefer bland food. I don't over do the spices. Just a bit to enhance what we are blessed to eat.

Spice the tomato stew.

 

This is the creative part and what helps to differentiate one person's chili from the other person's chili. I add 1/2 cup sugar, a large palm of sea salt, several Bay leaves, 1/4 cup Worcestershire Sauce, a generous shaking of crushed red pepper flakes and enough chili powder to completely cover the entire top of the stew. I add the ground cumin more carefully tasting as I add.

 

"Happy Chili" designed for the guys as we watch the 2012 Super Bowl. Dark and dreary Rochester this winter demands chili that is a pick me up for eyes and mouth.
