Reduced the black pepper in the sauce by about half, which made the heat bearable. Also followed instructions and put the spice rub on the outside of the pork and then sliced it, which helped with making sure the spices didn't burn while it was cooking.
Tonight's version is with fresh tomatoes and sweet corn. YUM.

Mix together melted butter, honey, juice of 1/2 lime and chili powder. Baste frequently while over flames. Cook only until the color changes.
No further additions to the corn will be necessary!
This is a Vigil Store for Santuario de Chimayo on the street where the miracle of the cross took place in the 1800s. A farmer looking down from a Mt. top praying saw a light coming from the ground in his field below. He went to it and started digging. A large cross was found and a church was built. The dirt is the area has miraculous powers.
The area is well known for their dried red chili powder.

1/4 tsp cinnamon, 1/8 tsp ground allspice, and 1/8 tsp salt.
Nice. Made this before, but we were in a hurry and I didn't get to take a pic of it. Lucky for me I made one entire recipe of the spice rub so I got about 5000000000 cups of it left.
