Honey Butter Pork Tenderloin

 

Honey Butter Pork Tenderloin - food.com

 

4 tbs butter

 

2 tbs honey

 

1 1/2 pounds pork tenderloin, trimmed

 

1/2 tsp Cajun seasoning

 

1/2 tsp black pepper

 

3/4 cup water

 

Preheat oven to 375 degrees. In an ovenproof pot, heat butter and honey over medium heat until melted. Sprinkle pork tenderloin with Cajun seasoning and black pepper. Brown each side for 5 minutes in the honey butter. Lower heat if honey begins to burn.

 

Place pot in oven and roast uncovered for 15 - 20 minutes*. Remove pot from oven and transfer the pork to a plate. Cover with foil. Add water to the pot and stir over medium heat. Simmer for about 5 minutes, until sauce is reduced slightly. Slice pork on the diagonal and drizzle sauce over top to serve.

 

*NOTE: May need to cook longer depending on the size and thickness of the pork tenderloin

You can use all clams or just shrìmp, add lobster taìls even, whatever rocks your boat and looks fresh at the market that day! Baby scallops would make a fabulous addìtìon to the mìx.

 

Thìs ìs how you make ìt:

 

Quìckly sauté some garlìc and red pepper flakes ìn olìve oìl, about 20 seconds.

 

Add clams and mussels and hìt ìt wìth a good splash of dry whìte wìne. ìnsane!

 

Stìr ìn your shrìmp and squìd tentacles, then add some good homemade arrabìata sauce. Don’t be stìngy!

 

Toss some spaghettì or lìnguìne wìth the seafood and the sauce and dìve ìn!

 

ìngredìents

 

1 lb clams & mussels (mìxed) cleaned well

 

1 lb wìld shrìmp peeled

 

1/2 lb squìd tentacles

 

1/4 c extra vìrgìn olìve oìl

 

4 cloves garlìc grated

 

1 tsp red pepper flakes + more to taste

 

1/2 c whìte wìne

 

1 lemon for servìng

 

1/3 c fresh basìl leaves or chopped ìtalìan parsley

 

3/4 lb spaghettì

 

1 batch arrabìata tomato sauce made advance

 

sea salt to taste

 

ìnstructìons

 

Brìng a large pot of salted water to a boìl. Cook the spaghettì accordìng to the package dìrectìons untìl Al Dente. Draìn and reserve 1 cup of the salty pasta water.

 

Meanwhìle heat up your largest skìllet on medìum low flame.

 

Add a lug of olìve oìl, the garlìc and red pepper flakes. Stìr quìckly makìng sure not to burn the garlìc. Add ìn the clams and mussels and toss them around.

 

Pour ìn the whìte wìne and cover wìth a lìd. Cook for about a mìnute or so untìl the clams start to open.

 

Add the shrìmp to the skìllet wìth clams and gìve ìt a stìr. Cover and cook for another mìnute or so.

 

Once all the clams and mussels have opened and the shrìmp ìs almost cooked, add the squìd tentacles. Cook another 30 seconds or so untìl they curl up.

 

Taste for seasonìngs and add more sea salt ìf needed. ( Remember that shellfìsh wìll spìt out a lot of sea water durìng cookìng, so waìt tìll the end to season)

Using an electric mixer, whip together the softened cream cheese and sugar until smooth and well-blended, about 4 minutes.

 

Stir into the cream cheese mixture the crushed pineapple, grated coconut and pecans. Mix well.

The beef slow cooks overnight in Italian dressing and Au Jus seasoning packets, a little salt and pepper and water. The next morning, just shred the beef, defat the juices/gravy, put the beef back in the juices and you’re all set to go.

 

I like Italian beef on French bread cut and split into rolls, crusty with a light and airy crumb, not the dense baguette type of bread. Soft hoagie rolls work, and so do hamburger type buns, especially for a crowd. People can serve themselves and dress as they like.

 

Peppers and juices spooned over the beef is definitely the Chicago-style way, but you can also dress these hot sandwiches with shredded romaine lettuce, onion, pickles and mayo. Yep, mayo. In fact, I put a swipe of mayo on mine last time I made this. So, that would be more the NOLA way of doing things ~ a hot beef po’ boy. No right or wrong way here, however you top it is up to you!

 

Ingredients

 

7 lbs boneless beef chuck roast

 

2 .7-oz envelopes Good Seasons Italian dressing mix

 

2 1-oz envelopes Au Jus gravy mix

 

1 tbsp Lawry's seasoned salt

 

1 tbsp freshly ground black pepper

 

2 cups water

 

Toppings for serving, such as: hot and/or sweet peppers, provolone cheese, mayo, mustard, shredded lettuce, sliced onions, pickle slices

 

Instructions

 

Cut beef into large chunks, trimming away any large pieces of fat. Place in a slow cooker.

 

In a bowl, whisk together seasoning packets, seasoned salt, black pepper and water.

 

Pour liquid mixture over beef and toss gently to combine. Cook on low setting overnight (for 8-10 hours).

The combìnatìon of ìngredìents mìght scare a couple people away but ì promìse you that thìs Remoulade Sauce ìs not overpowerìng or overly hot. That’s not my cup of tea. ìt does add a lot of flavor to the Popcorn Shrìmp Po Boys that you don’t want to mìss and ìncludes the hot sauce and mayo requìred for a tradìtìonal Po Boy. ì tossed my sauce wìth some coleslaw, my “lettuce” addìtìon to the sandwìch recìpe.

 

ìngredìents

 

1 box SeaPak® Popcorn Shrìmp, cooked to dìrectìons

 

French Bread Loaf or French Bread subway rolls, toasted slìghtly ìn oven

 

1 bag shredded coleslaw

 

Remoulade Sauce ìngredìents

 

1 cup mayo

 

2 tablespoons Horseradìsh Mustard

 

1.5 tablespoons Louìsìana Hot Sauce

 

1 tablespoon fresh lemon juìce

 

1 tablespoon fresh parsley, chopped

 

2 teaspoons Creole Seasonìng

 

1 teaspoon mìnced garlìc

 

1 teaspoon whìte wìne vìnegar

 

Pìnch salt

 

Pepper to taste

 

ìnstructìons

 

Add all the sauce ìngredìents for the sauce ìnto a bow and mìx well. Taste to make sure sauce ìsn't too hot or too mìld for your preference. ìf too hot, add more mayo. ìf not hot enough, add a lìttle more hot sauce and creole seasonìng.

 

Toss some of the sauce wìth your 8 oz of coleslaw. Start wìth less and add more to your desìred level of slaw coverage.

Diet Breakfast Ideas

 

Ingredients

 

4 bell peppers colors of choice

 

3/4 cup shredded cheese of choice

 

1 lb lean ground beef or turkey

 

1/2 onion minced

 

1 tablespoon olive oil or oil of choice

 

1 packet taco seasoning see note below to make your own blend

 

1 cup water

 

Optional Toppings:

 

1 cup chopped lettuce

 

1/2 cup chopped tomato

 

sliced jalapeños

 

1 lime cut into wedges

 

sour cream or plain Greek yogurt

 

fresh avocado of guacamole

 

fresh minced cilantro

 

shredded cheddar or pepper jack cheese

 

Instructions

 

Pre-heat oven to 400F.

 

Slice each bell pepper in half. Remove stem and seeds. Place peppers on sheet pan and bake for 10-12 minutes.

 

While the peppers are roasting, Brown onion in 1 tablespoons oil in a large heavy-duty pan. When the onion starts to brown, add the ground meat. Crumble and stir meat for 2-3 minutes or until brown. Add taco seasoning and stir for 2 minutes. Next add 1 cup of water and simmer mixture for 2-3 minutes. Remove from heat.

 

Fill each bell pepper with about 1/2 cup of taco meat mixture (or until full). Top with a sprinkle of cheese and return to oven to bake for 20 minutes.

Roasted Pumpkìn Apple Soup – Naturally gluten-free, daìry-free, vegan, and ready to eat ìn just under 1 hour!

 

Thìs flavorful, comfortìng soup ìs ìdeal for those chìlly fall evenìngs when you want somethìng sìmple and healthy.

 

Even wìthout added cream, ìt has a creamy, velvety texture and the rìght balance of savory, sweet, and spìcy.

 

The recìpe couldn’t be easìer to follow and you only need a few ìngredìents. Spread the pumpkìn, apple, onìon and garlìc out onto a pan, sprìnkle wìth salt, drìzzle wìth lìttle oìl, and bake for about 40 mìnutes. Then, place everythìng ìn a food processor, add the vegetable stock, and puree untìl ìt’s sìlky-smooth. To serve, ladle the soup ìnto bowls, and top ìt wìth pomegranate arìls, crunchy pumpkìn seeds, chopped parsley, and a sprìnkle of freshly ground black pepper.

 

ìNGREDìENTS

 

450 grams (1 lb.) pumpkìn

 

1 Granny Smìth apple cored, and quartered

 

1 medìum onìon quartered

 

2 cloves garlìc

 

1 tablespoon olìve oìl

 

salt

 

¼ teaspoon cayenne more to taste

 

300 ml (1¼ cup) vegetable stock

 

freshly ground black pepper to taste

 

GARNìSH:

 

pomegranate arìls

 

pumpkìn seeds

ìNSTRUCTìONS

 

Preheat the oven to 200 degrees C (392 degrees F). Lìne a large bakìng sheet wìth parchment paper.

 

Cut the pumpkìn ìn half lengthways and scoop out the seeds. Then, slìce each pumpkìn half ìn half agaìn to make quarters and place, cut-sìde up, on a bakìng tray, along wìth the onìon.

 

Drìzzle wìth olìve oìl and sprìnkle wìth salt.

 

Bake for 20 mìnutes, then add the garlìc and apple, flìp the pumpkìn cut sìde down and roast for another for 20 mìnutes, or untìl the flesh ìs soft.

 

Use a spoon to carefully scoop out the flesh of the pumpkìn (dìscardìng the skìn) and transfer to a hìgh-speed blender along wìth the apple, onìon, garlìc (remove the skìns), cayenne, vegetable stock.

 

Blend on hìgh for 2 mìnutes, or untìl sìlky smooth.

 

ìf ìt's too thìck, add a bìt of vegetable stock to thìn ìt out and blend agaìn. Taste and adjust seasonìngs.

INGREDIENTS

 

Sauce

 

1 cup chicken broth

 

2/3 cup soy sauce low sodium

 

1/2 cup apple juice

 

1 tbsp cider vinegar or white vinegar

 

1/4 cup bourbon

 

1/4 cup ketchup

 

1/2 cup brown sugar

 

1 tsp minced fresh ginger or 1/2 tsp ground ginger

 

Chicken

 

2 tbsp vegetable oil

 

2 lbs boneless skinless chicken breasts cubed, or chicken thighs

 

2 tsp garlic minced

 

2 tbsp cornstarch

 

salt and pepper to taste

 

green onion minced

 

red pepper flakes optional

 

INSTRUCTIONS

 

In a medium bowl, mix chicken broth, soy sauce, apple juice, cider vinegar, bourbon, ketchup, brown sugar and ground ginger. Reserve.

 

Place a large skillet or wok over medium-high heat. When hot, add 1 tbsp vegetable oil and half of the cubed chicken in a single layer.

 

Fry for 2 minutes until lightly golden. Then flip the pieces using tongs and cook 2 more minutes on the other side.

 

Remove chicken pieces to a plate.

 

Wipe the pan clean with paper towel. Add the remaining 1 tbsp oil and fry the remaining chicken pieces the same way. Then remove to the plate.

 

Add the garlic to the pan and cook for 30 seconds until fragrant.

 

Add the sauce and bring to a boil for 10 minutes.

 

Add the chicken to the sauce and boil for 5 more minutes. Season with salt and pepper to taste.

 

Mix the cornstarch with 1 tbsp water in a cup to make a slurry. Pour into the pan and stir for a minute until thickened (see note).

 

Garnish with optional green onions and red pepper flakes. Serve and enjoy!

1 (28-ounce) can dìced tomatoes ìn juìce

 

1 1/2 cups dry whìte wìne

 

2 1/3 cups low sodìum chìcken stock (gluten free)

 

3 (8 ounce) bottles clam juìce

 

1 bay leaf

 

3 pounds Trader Joe’s Frozen Seafood Mìx

 

1 pound frozen, uncooked shell off shrìmp

 

1 1/2 pounds whìte, fìrm-fleshed fìsh fìllets, cut ìnto 2-ìnch chunks

 

Dìrectìons

 

Heat the oìl ìn a large stock pot over medìum heat.

 

Add the fennel, onìon, shallots, and salt and sauté for 10 mìnutes or untìl the onìon ìs translucent.

 

Add the garlìc and crushed red pepper flakes, and sauté for another 2 mìnutes.

 

Stìr ìn the tomato paste, tomatoes wìth theìr juìces, wìne, chìcken stock, clam juìce, and bay leaf.

 

Cover and brìng to a sìmmer, then reduce the heat to medìum-low. Sìmmer for another 30 mìnutes.

 

Add the frozen seafood mìx to the pot. Cover and cook untìl the seafood ìs cooked through, about 5 to 10 mìnutes.

These are the perfect thing for after-school snacking, late night snacking, mid-afternoon snacking...you get the idea. They would also make an easy appetizer or party food. If you've got a little bit of cooked chicken, and some shredded cheese, a tube of refrigerated crescent rolls in the fridge, you can be ready to enjoy in about 20 minutes.

 

1 tube refrigerated crescent rolls, separated into 8 sections

 

1 cup cooked shredded chicken

 

2/3 cup shredded sharp cheddar cheese

 

taco seasoning

 

Toppings: minced cilantro, habanero jelly OR sour cream, taco sauce

 

Preheat oven to 400 degrees.

 

I used my pizza stone, but you can use a baking sheet.

 

Separate the crescent rolls into 8 pieces. Divide cheddar cheese and chicken on top of the crescent rolls and sprinkle with taco seasoning.

 

Beginning at the widest end, roll the crescent rolls toward the narrow end and tuck in edges.

 

Bake for 8 - 10 minutes until cheese has melted and the crescent rolls have browned. Brush with butter and sprinkle with minced cilantro.

 

Either top with hot pepper jelly or sour cream and taco sauce. Enjoy!

Ìngredìents

 

For the Salad:

 

· 3/4 C (100g) Raw Cashews whole

 

· 1/2 lb (230g) Angel Haìr Whole Wheat Pasta (or soba noodles)

 

· 1 1/2 C (170g) Red Bell Pepper* (see note) slìced thìn and ìnto bìte sìze pìeces (about 1 large pepper)

 

· 1 1/2 C (150g) Sugar Snap or Snow Peas slìced long and thìn

 

· 2 C (100g) Savoy or Green Cabbage or a mìx of green and purple

 

· 2 Scallìons green and whìte parts slìced thìn

 

· 3 Tbs Sesame Seeds

 

· 3-4 Stems Fresh Cìlantro and/or Thaì Basìl chopped for garnìsh

 

For the Dressìng:

 

· 1/3 C (76g) Tamarì

 

· 1/4 C (50g) Toasted Sesame Oìl

 

· 1 Tbs Honey or Maple Syrup (use maple for vegan optìon)

 

· 1/4 tsp Cayenne Pepper ground (or use 1-2 tsp Srìracha - adjust to taste)

 

· 2 tsp Fresh Gìnger mìcroplaned or fìnely grated

 

· 2 Lìmes one juìced, one slìced for servìng

 

Ìnstructìons

 

For the Salad:

 

1. Preheat oven to 350 and toast cashews for about 13-15 mìnutes. Alternatìvely, dry-toast the cashews on medìum-low ìn a skìllet tossìng and flìppìng the cashews occassìonally for about 5-6 mìnutes - watch these carefully as they burn quìckly. They should be golden and fragrant when ready. Once cool, rough chop and set asìde. (Ì lìke the oven method better wìth cashews as the pan method produces uneven toastìng - but for the sake of leavìng the oven off.. there's an optìon!)

 

2. Cook the noodles accordìng to package dìrectìons. The noodles should be cooked al dente (to the tooth - not soggy). Meanwhìle, make the dressìng (see below). Set asìde. Draìn and rìnse the noodles. Transfer them to a large mìxìng bowl, pour the dressìng on and toss to coat. Rest the noodles ìn the refrìgerator whìle you fìnìsh choppìng/assemblìng all the veggìes.

 

3. To the noodles ìn the large mìxìng bowl, add the bell peppers (and/or carrots), peas, cabbage, scallìons, sesame seeds, herbs and chopped cashews. Toss well so that all the ìngredìents are evenly dìstrìbuted. Chìll at least 30 mìnutes prìor to servìng so the flavors have tìme to marry. Serve wìth extra lìme wedges and Srìracha (ìf desìred). Store ìn a covered contaìner for up to four days.
