Chicken curry with rice makes for excellent camp fare.

 

Prepare the curry ahead of time (see The Polyphagous Dragon for recipe) , pack in airtight freezer bags and take in frozen. The curry will serve as an ice pack to keep the rest of your food cool.

 

Once the curry has thawed out, it is time to consume it. Cook the rice first, then mix curry into the cooked rice to heat.

I bought my chicken curry and rice and was just starting to eat it when the man brought me the bhajis free!

I have made this recipe so many times and it never gets old, Its my comfort food.

We served this over rice with a choice of 9 condiments: bacon, raisins, toasted coconut, plain coconut, chopped peanuts, scallions, pineapple, mandarin oranges, avocado (not traditional, I know), and one I'm forgetting. Oh, and chutney. YUMMY.

So I found this great recipe from Stephanie O'dea's blog crockpot365. I've been meaning to use the crockpot that my MIL gave me for christmas 2 years ago. MIL-If you're reading this, I swear I loved the gift, but was too lazy to take it out of the box and use it. Just know that I'm in love with it and appreciate your thoughtful gift. Ok, I digress. As I was searching for recipes for my slow cooker, I came across this site. What's great about the blog is that Stephanie offers reviews (based on her, her husbands & kids approval/disapproval) and comments on what she would do differently. Usually she provides a follow-up the next time she cooks it again. I fell in love when I found this Indian Curry recipe. I'd been dying to make some curry.

 

Well it didn't turn out as spicy or thick as I thought it would. The taste was really mild. But I believe that it was partly my fault. Okay, it was my fault but hear me out. Part of the recipe requires coconut milk, not lite coconut, just regular coconut milk. Of course, after 7 hours of cooking, the curry paste came out very liquidy. If I would have read the directions carefully it specifically states:

 

1- 13.5 oz can of coconut milk (don't use the light, it doesn't taste as good. or use the light and then stir in heavy cream at the end. Your tongue wants the thick stuff... trust me.)

 

I was beating myself (ala Chris Farley: "Stupid, stupid.") over my failed attempt. But then I remembered that when we had gone grocery shopping. my husband suggested I get the cheaper coconut milk which was the lite. Darn you mister penny pincher!

 

Determined to salvage the curry, I took to the cooking gods via the internet and searched. One way to make curry paste is to blend/puree the cooked veggies and spices till it creates a paste. By golly gee whiz, it worked! The only problem, is it still had a very mild taste to it. One reader suggested adding cayenne pepper which I didn't have. Maybe next time it'll taste better with regular coconut milk and a dash of cayenne pepper. You live & you learn.

Chicken curry. This was SO good. I bought a red curry paste from an asian market I visited with Christine and it tasted just like something from a restaurant- coconut milk and all. Nothing like fresh curry.

 

And the pink tablecloth features again.

That had me really depressed.

But this instantly cheered me up.

Yesterday evening the weather was still warm and sunny thus we could eat our dinner (a simple chicken curry) on the balcony; accompanied by a chilled oragnic white wine.

I fancied something english so had chicken curry in a yorkshire pudding with a pint of spanish lager & wifey had a mushroom omelette & chips // it was good although left me a little hungry so on the walk back to our caravan I picked up a slice of double chocolate cake from the late night baker. england lost 0-1 arrghh.

At the Thai House in Charlotte, NC. I could barely resist not eating this before I took the picture. I swear the chicken was so flavorful and it seemed to melt in your mouth ... lol as if chicken could really do that.

Chicken curry with Jamaican Curry powder

Today was a long and weary day! It was getting dark as we arrived at Namche, where the best hot shower in the Khumbu awaited. But in the end, better than the shower, was the chicken curry. As I ate the best meal I had eaten in more than a week, the realisation dawned on me that my true purpose on this planet, is to eat other animals!
