I tried to get a good photo of this red curried chicken last night and failed. Tonight I succeeded.
I made this with red curry paste, coconut milk, fish sauce, chicken and vegetables.

I cannot rave enough about this food truck. I love Sandy's Sandwiches. Their portions are huge, you could share the sandwiches and they are organic and delicious! If you are ever on Oahu, Hawaii look for the little turquoise cart usually parked at Shark's Cove on the North Shore of Oahu.
12 cloves garlic,
2 jalapeno chillis,
1 Dorset Naga chilli
1 onion, chopped
Fry the above until brown, then add -
4tbs curry powder
500g chicken breast
fried until brown, then add -
500g chopped mushrooms
200g new potatoes, chopped
2 red peppers
100g sweetcorn
1 tin chick peas
3 tins plum tomatoes
1 tin kidney beans
1 small tin baked beans
1tbs Marmite dissolved in about 100ml hot water
And then leave on a low heat for 90 mins or so, stirring occasionally until ready.
If the spoon starts to dissolve, you may have overdone the chillis.
Malaysian curries differ from state to state, even within similar ethnic groupings as they are influenced by the many factors, be it cultural, religious, agricultural or economical.
Malaysian curries typically use curry powders rich in turmeric, coconut milk, shallots, ginger, belacan (shrimp paste), chilis, and garlic. Typical Malaysian curries has a layer of chilli oil on top due to dried chillies being use in the paste.

Shame we arrived so late; with the restaurant shutting at 3pm, the buffet lunch at Kathmandu Kitchen was nearly all gone at 2.30pm. We had the last two plates left out, and helped ourselves to some very tasty curries. The Nepalese food served at Kathmandu Kitchen was very like Indian food. In fact, they even had aloo ghobi, which makes me think they were also catering to the Indian population nearby.
ingredients: chicken drumettes, curry, spring onions (scallions), onions, garlic, a bit of ginger, salt, pepper, green bell pepper, red bell pepper, allspice, potatoes (optional)
Main meal service from Tokyo/Narita to Seattle/Tacoma on United 876 in economy.
It was decent enough but I was pretty happy to get curry on a plane.

Ingredients
Chicken - 1 kg, with bone, clean and cut into medium size pieces
Onions - 2, medium, finely chopped
Curry leaves - 1 sprig
Turmeric powder - 1/4 tsp
Tamarind paste - 1 tbsp
Thick coconut milk - 1/4 cup (optional)
Salt to taste
Oil - 3 tbsps
Ghee - 2 tbsps
Lunch on the 5th day of Chinese New Year: I was in a hurry to get lunch ready for YH before he went out to work. Usually, chunky potatoes were added in the curry at the last 20 minutes of cooking time. There was not enough time for this so I cooked French fries instead. And because ER wanted to have some beancurd skins to go with the curry, I fried them too. This combo was rather refreshing!
This is a quick indian curry that kids will love to eat. It is very simple and savory and delicious.
After lunch at Sichuan Village, Jon Singer and LisaJulie took me to this Indian bakery. Thankfully I was stuffed or I would have purchased far too many pastries to take with me onto the plane.
