Making hard cheese is just that...hard. It takes several days to make

the cheese wheels and the ripening conditions are very specific. I

hooked up my fermenter controller to this little yard sale dorm fridge

we picked up for $5. Now the fridge can run at 53F (ideal temperature

for cheese ripening) rather than it's usual 35F that most

refrigerators run at. Our latest raw romano cheese will need to sit in

the dorm/cheese fridge for three months (minimum) before we can start

munching on it.

Every visit to my parents house includes at least one night of this - cheese and wine.

The Grote Markt in Gouda

 

Although no cheese comes from within the city limits of Gouda, there's a lot of cheese made in the surrounding environs. A lot of which can be purchased at the Grote Markt when a market is happening. To emphasize that point, all the light poles in the Grote Markt have life-size cheese wheels on them.

 

I would call this "silly," but I suspect the Dutch would disagree. My favorite phrase I've heard in the Netherlands, "that's not cheesy, that's our culture!" However, I feel safe in calling this particular culural artifact "cheesy."

Ok this is the last of the cheese grater shots. not bad for hand held cheese grater, 1 macro filter and a kitchen light at 1am in the morning. Well there was nothing in the fridge, otherwise I would have made a scooby snack instead.

This one has cheese paste dabbed onto hot bread, and voila - melty goodness!

 

I was making hops bread from Mom's recipe and decided I wanted to try it with some cheese paste in it. So voila. Next time, for stuffing bread, the cheese paste needs less butter. But otherwise, great ;-)

the new york italians love their fresh mozzarella. they have their own word for it: mutzalell, which i spelled as phonetically as possible.

 

about a month or two ago, i was tending bar when my friends JR & Barbara came in from a day strolling the streets of manhattan. they were waxing about the virtues of a place called Joe's Dairy, claiming it produced the finest cheese in the world. barbara insisted they open their sack and share the love with me right there and then.

 

they had a misshapen smoked mozzarella and a fontina (i think that's what it was) which we put on a paper plate and jr started whacking up with a plastic knife. he handed me a hunk.

 

oh. heaven. i'd never had finer cheese in my life. it was amazing, and between the three of us, and two detectives at the bar, we polished that cheese off in record time. i haven't been able to get it out of my mind since.

 

so. on thursday, jr had the day off and we decided to hang out together in the city, joe's dairy being our main goal.

 

joe's dairy is a tiny, TINY little place on sullivan just below houston. you can smell milk when you step inside - not curdled, it smells wonderful. and in the back, this incredibly adorable man was making the mozz, and was kind enough to let me take a picture of him. i think i'll print it out and bring it to him. along with my card. just in case he needs a photographer for something. or a restaurant critic. or a groupie. you never know.

They come out of the brine and get rolled in chopped mint leafs! You can fry them without any oil untill they turn golden brown. They fragrance is wonderful, the taste is like something between cheese and meat + heaven.
