The stuffing for these actually sounds quite good: a mixture of walnuts, apple, celery and breadcrumbs, bound with an egg.
another lower cholesterol option is homemade burgers, made from minced beef, mushrooms, wholemeal breadcrumbs and onion. These turned out to be a little dry but not bad - certainly nothing a drop of salsa sauce couldn't remedy :)

Zucchini Tots
Ingredients:
1 cup zucchini, grated
1 large egg
1/4 medium onion, diced
1/4 cup reduced sharp cheddar cheese, grated
1/2 cup seasoned breadcrumbs
salt & pepper to taste
cooking spray
Directions:
Preheat oven to 400 degrees. Spray mini muffin tin with cooking spray.
Grate zucchini into a clean dish towel. Wring all of the excess water out of the zucchini. In a medium bowl, combine all of the ingredients and season with salt & pepper to taste.
Fill each muffin section to the top, pushing down on the filling with your spoon so it's nice and compacted so they don't fall apart when you take them out of the tin.
Bake for 16 to 18 minutes or until the tops are golden.
Use a plastic knife or rubber spatula around the edges of each tot to remove them from the muffin tin. Enjoy!

Stirfry fresh garlic, onion and eggplant together with Mrs. Dash and a little salt. Fry bacon, add to veggies in bottom of cast-iron pot. Pour 2 beaten eggs over the top, add shredded cheddar cheese and bread crumbs. Press down, then cover pot and let omelette slowly fry. Flip half of it over the other half when finished, and serve.
A succesful eggplant parmesan. Harder to make when you first have to make breadcrumbs and spaghetti sauce...

1/2 cup breadcrumbs
1/2 cup ground almonds
1/2cup sugar
3 cups pitted fresh sour cherries or 2 15-oz. cans water-packed tart cherries, drained
1/4 tsp. almond extract, optional
6 sheets frozen phyllo dough, thawed
6 Tbs. vegan margarine, melted
1 .Preheat oven to 400°F. Coat baking sheet with cooking spray.
2 . Stirtogether breadcrumbs, almonds, and sugar in bowl. Combine 3/4 cup breadcrumb mixture and cherries in separate bowl. Add almond extract (if using}.
3. Unroll phyllo, and keep under damp towel to retain moisture. Place 1 phyllo sheet on work surface, brush with margarine, and sprinkle with 2 Tbs. dry breadcrumb mixture. Top with second phyllo sheet. Repeat layering with remaining margarine, dry breadcrumb mixture, and phyllo sheets, leaving last phyllo sheet bare.
4.Brush 1-inch borderof margarine around edges of phyllo stack. Spread cherry mixture in center ofphyllo stack inside margarine borders, using hands to pack filling into smooth cylinder. Fold short edges of phyllo stack over filling, Carefully roll phyllo around Filling burrito-style into large log. Place seam-side down on prepared baking sheet. Brush strudel all over with melted margarine, and sprinkle top with remaining dry breadcrumb mixture. Bake 20 to 30 minutes, or until strudel is golden-brown, Cool at least 10 minutes before serving.

The finished product! We can't wait to dig in. The roast was delayed so we're all hovering over the mac-n-cheese salivating.

Apple strudel like my mom makes it. Layered with lightly toasted breadcrumbs, melted butter, apples..cinnamon, raisins. It is so goood!!!
For Valentine's Day this year, Anne and I again made a nice dinner for ourselves. This is the starter: blanched broccoli tossed in a vinaigrette, served on top of fresh mozzarella with pine-nut breadcrumbs. The dish is supposed to use burrata, but we couldn't find any in Cambridge.
I did a different style of photo than I normally do for this shot, showing a full place setting. I think it worked reasonably well, although this is a style that I need to practice more.
Strobist info: 430EX through SB-III from front right @ 1/32; LP120 bounced off ceiling at 1/4 for fill. I wanted less directional light here, so the fill is fairly high.

* 3 sweet potatoes
* 1 carrot
* 1 tin of chickpeas
* 1 red onion
* A pinch of dried chilli flakes
* Juice of 1 lemon
* 2 tablespoons olive oil
* A handful of breadcrumbs
* A handful of chopped parsley
* 1 tsp toasted coriander seeds, ground
* salt and pepper
* 1 whole egg
Preheat your oven to 180C Drain the chickpeas and in a large bowl mash them with a potato masher. Don't squish them to a puree, that's not what you want. You are looking for a textured mush, with lumps here and there. Peel and grate in the sweet potato and carrot. Finely chop the onion and add this to the bowl, along with all the other ingredients. Mix everything together - this is best done with your hands. Line a baking sheet with greaseproof, rubbing a little oil on it. (If you rub oil on the tray, then push the greaseproof down onto it, it'll stick quite happily). Take a handful of the mixture, about the size of a Clementine, and roll it in your hand until you form a ball. Squish it down to about a centimetre thick. It doesn't matter if there are little bits sticking out - these will become lovely and crispy as they cook Place the cakes on the baking sheet. When you've done all of them, you can either pop them in the fridge to firm up a bit, or stick them straight in the oven. They'll take around 25 minutes to cook.
