I had leftover Mac n' Cheese from the night before, so I performed a little culinary experiment: roll the macaroni into bite-sized balls, coat them in flour, dip them into an egg wash and breadcrumbs, and fry them. Pretty fucking good, if you ask me.
Ingredients for "Gyro" Meatballs
1 lb. ground lamb
plain breadcrumbs
Greek seasoning mix (I used "Zeus" brand)
cumin
garlic powder
ground cinnamon
salt & pepper
Ingredients for Sauce:
yogurt
diced cucumber
minced garlic
and if you like it, some dill weed (I love it!)
Ingredients for Wrap
flour tortillas (I keep leftovers in the fridge)
shredded lettuce
sliced tomato (I didn't have any when I took the picture)
yogurt sauce
Can't give specific amounts as I cook by feel (e.g. enough breadcrumbs for meat mixture to feel slightly firm)...and small. Secret ingredients for making these taste like the gyros you get in Greek restaurants I think are the cumin and cinnamon. Go easy on the cinnamon.

Herring is usually eaten raw in the Baltic countries but I remember some scrumptious herring in a tomato sauce served up by "Frank the pig" in Trieste in northern Italy. It was a very simple dish which was served with some Tokai white wine from across the border in Slovenia and some rustic bread for mopping up the remains of the sauce from the plate.
I had bought some filleted herring from the shop and while driving today I came up with a recipe which involved the herring fillets stuffed with blue cheese and extra hot chillies, and then rolled in breadcrumbs seasoned with salt and pepper, and then fried in butter.
For the sauce I diced a single red onion and thinly sliced a single bulb chinese garlic, which I fried in olive oil, and to this I added some sundried tomato Pesto.
The fish were flash fried giving each side no more than 5 minutes each side or until the blue cheese inside the fillets had melted, and then it was served piping hot with the boiling sauce poured around the edge of the plate.
I had to suffice with some Hungarian white wine and to mop the sauce up some rough country bread with linen seeds.
Beef involtini filled with an aromatic mixture of breadcrumbs, mint, garlic and young Sicilian pecorino cheese. Served with their onion compote.

Despite a proliferation of pancakes, dumplings and breadcrumbs, I was still able to find something gluten-free on the menu of this really lovely Polish restaurant. I had Gołąbki z mięsem w sosie pomodorowzm, ziemniaki ("tender poached cabbage leaf stuffed with minced meat and rice cooked with tomato sauce with potatoes").

I got a pound of ground beef and half a pound of ground pork from my CSA share last Wednesday. It was unplanned since I would rather get more vegetable. But of course, when life gives me ground meat, I make meatballs. When it comes to all things comfort food, I can't think of a better source than Pioneer Woman.
I sent little brother to buy some fresh pasta from St Lawrence Market on Saturday and he came back with these lovely pale green basil spaghetti. I love the taste of fresh pasta. There's just something about it that dry pasta cannot measure up. I made the recipe as written except for one small change. I was running late and the sauce could use more slow simmering to further thicken up. I cheated by adding a healthy splash of cream and it turned into the perfect consistency very quickly. I think it's a cheat that Ree would approve. :)
About those meatballs...so tender! I absolutely love them (and so did B). The breadcrumbs were made from stale baguette that I stashed away in the freezer. Ree was right about the juice of the meatballs flavouring the homemade tomato sauce. My recipe turned out 30 meatballs and plenty of sauce. I think dinner for this week is all set.
