Following this recipe (social media lesson learnt: DO read the comments before attempting any recipe - I had the exact same problems reported by one commenter)

In less than five minutes, this was all that was left of the loaf. I ate just one small slice myself.

The recipe called for a whole lot of breadcrumbs! It was pretty delicious, and I used to hate scalloped potatoes back when I was a non-vegan!

A landmark of Lucerne built in 1859, an old restaurant known to serve wienerschnitzel (cutlets of veal dipped in their secret blend of beaten egg, Swiss cheese and herbs, coated with breadcrumbs and cooked in butter table-side).

A wonderful walk along the coast at Rhoscolyn. What you can see here is the 'breadcrumb trail' of our walk, viewed on the Anquet map App on my tablet. It's also nostalgic - from the wrapper, to the composition on the soft sesame seed bun. It's McD's grown up, but also at a crazy good price. Insane.

Herring is usually eaten raw in the Baltic countries but I remember some scrumptious herring in a tomato sauce served up by "Frank the pig" in Trieste in northern Italy. It was a very simple dish which was served with some Tokai white wine from across the border in Slovenia and some rustic bread for mopping up the remains of the sauce from the plate.

 

I had bought some filleted herring from the shop and while driving today I came up with a recipe which involved the herring fillets stuffed with blue cheese and extra hot chillies, and then rolled in breadcrumbs seasoned with salt and pepper, and then fried in butter.

 

For the sauce I diced a single red onion and thinly sliced a single bulb chinese garlic, which I fried in olive oil, and to this I added some sundried tomato Pesto.

 

The fish were flash fried giving each side no more than 5 minutes each side or until the blue cheese inside the fillets had melted, and then it was served piping hot with the boiling sauce poured around the edge of the plate.

 

I had to suffice with some Hungarian white wine and to mop the sauce up some rough country bread with linen seeds.

 

This was cooked by Octo for tonights dinner,,,, This was very tasty and very fulfilling... Left overs in the freezer.. This was perfect as i have a nasty toothache at the moment, so only soft food for me..

This delightful bug was constantly on the move - except when he was feasting on a breadcrumb - so it was quite a challenge to capture his cuteness on camera…

So yesterday was my first full day following my new diet regimen. I signed up for eDiets on Tuesday as part of my New Years Resolution. They provide a weekly shopping list, meal guide with recipes and a fitness guide. Each week you're supposed to check-in. Part of my project is going to be taking pictures of each dinner I make. While I may not post each day I should be taking a photo and be able to show that I cooked the meal. Hopefully this keeps me honest.

 

To review the recipe. It was a 4 ounce piece of chicken (speaking of, I have to get a scale, I'm guessing at the moment) dipped in milk and then dipped in breadcrumbs. Baked. I added oregeno to the breadcrumbs. The Healthy Fries are just small slices of potato covered with low-fat cooking spray and baked. The salad had a low-fat raspberry vinegratte for dressing.

 

Rating: Very Good to Excellent.
