I wasn't sure that beetroot in risotto would work for me as a flavour, but I stand corrected. This was beautiful, and an easy way to use the up the plentiful beetroot we're growing at the plot.
Recipe
Fry garlic, 3 golfball sized beetroot and tops in oil until tops are soft. Add arborio rice and fry for a few minutes. Add 1 stock cube, salt and pepper and water and stir/add water until cooked. Serve with a squeeze of lemon and bread of your choice.
In future I'll add fresh parsley to this, as I think it would work with the flavours.
Bread rolls were this recipe, plus the remainder of a pack of poppyseeds in the cupboard.

my first beetroot ever picked & roasted from my garden. Amazingly sweet and tasty. yay for latex gloves my hands are normal colour!!
Such a purple plate. Beetroot very earthy, worked well with the game and bitterness of the raddicio.
I loved the look of these small beetroot, so just had to buy and photograph them.
I just can't decide which image I like the best. Can yo help me out? These are taken in early morning light on my north-east facing patio.
If you come back in a day or so I will bring you the cooked and pickled variety - delicious!
