Beetroots boiled, peeled and then blended with mustard, balsamic vinegar and some of the liquid from boiling, combined with cous cous (again cooked in the beetroot liquor). Velvet deliciousness!
A very pretty loaf studded with bright red, coarsely grated, beetroot bits. The recipe is a little on the salty side, and the raw beetroot has an overly grassy flavour. Perhaps this recipe could be improved by either roasting the beetroot whole before grating it, or with the addition of garlic and rosemary.
Because it is basically a white bread, the texture was light and fluffy, but still chewy because Julia used good bread flour.

Found in a basement of the abandoned hospital Beelitz-Heilstaetten.
Always be careful when exploring unkown basements... there are hazards where your Geiger counter won't warn you.
Call me a coward, but I didn't look for the best before date - these beeroots (German: Rote Bete) have their price still given in east german marks. So they are probably about 20 years old...
Some people say if you open one of these glasses and inhale the spores you will mutate into some weird creature haunting the old tunnels under the infirmary... and you really meet some strange people down there...

Greetings fellow Flickrites! I am cutting short my hibernation (It's winter over here in Melb) and uploading a picture of a brunch I had with a friend just a day ago.
Fandango is so interesting as a cafe and has a sweetass courtyard that I will rave about when I next write in my food blog.
I love how the contrast of colours makes this dish so appetising. Can't wait to go back and have myself a coffee too! Ugh. Pity the broke student.
