I asked to take a picture of the chicken cooking... Tim said he was glad he cleaned the oven this week...
Following the Backyard Championship Ribs recipe from the BGE website,
I slathered yellow mustard on the surface of the ribs, then massaged in a BBQ rub. I used about a cup in all of the same mix that I used for the shoulder last time.
The BGE was set up for indirect cooking with a plate setter. I lined a roasting rack with foil, then put the slab on it. Underneath, I had a 9×13 pan to catch drippings.
