Dang, only just now as I'm writing the caption for this photo did I notice the registered-trademark symbol there. That would have made a great addition to my i-dots collection.
Today I baked something different to carry us through the week - pain de mie - the French version of a plain loaf bread (above, right). 'Mie' means 'crumb' and this bread is one that, unlike almost every other kind of bread baked in France, is NOT about the crust. Here, the crumb is the star of the loaf. This is the bread used in the French toasted cheese sandwich, croc monsieur and other preparations requiring a soft-crusted bread. The recipe can be found in Richard Bertinet's book "Dough".

After a night out at Lee Burridge I had two hours sleep then woke up and decided to make these goodies.
Croissants, Almond Croissants, Pain Chocolat and two Baguettes
Baked to Perfection is a 24 hour bakery on Jusction Rd, Eagle Junction, where I often get meals while I'm driving. I'm convinced that 24 hour bakeries are great idea & that there should be more of them. Definately better than 24 hour McDonalds! That's Scott behind the counter.

Zucchini bread. This is definately a favourite of mine, as of now. I made some cream cheese frosting to heap on to this about 5 minutes after this picture was snapped.
1 cup shredded zucchini, raw
1/2 cup peeled and grated apple, raw
1 1/2 cups whole wheat flour
1 teaspoon baking soda
1/4 teaspoon baking powder
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 cup applesauce (or canola oil)
1 cup splenda/sugar
2 eggs
1 teaspoon vanilla extract
Preheat to 350, bake for half an hour or so.
Trying to master a few Christmas breads from home even if just for the memories those smells bring me.
*I need a new apron...
