I think the thing in the middle is like jellyfish. It looks like rubber bands.
The red meat above it must be the Chinese equivalent of headcheese. I have no other explanation for it. There is an outer layer of jelly-fat and funny pimento-like things in the meat. Animal origin unknown.

The goal was to take photos of each course. It was just too good, we kept eating the food before the photo was taken.
It was a set menu and we thoroughly enjoyed all of it. Especially the healthy mousse that sounded like it might be made something like suggested here:
