Amuse: Cornets with Ris de Veau
Note: There is now a slight alteration in how the amuses are served. The gougères are brought to the table immediately after guests are seated. The cornets, which had previously been plated along with the other amuses, are now brought by a server as pictured above. One for each diner. (Obviously, there were three of us.) I think it's a nice personal touch. Finally, the rest of the amuses come plated as usual.
