Seared Short Rib Dumpling with Scallion Vinaigrette

This house is in an area where there are many houses build by the local people here. As they are of a lower income group, these houses are often built by themselves from building material and rubble they find. Despite the lower income, its amusing to see so may of them with satellite dishes!! Its debatable whether they are connected or paying for their monthly subscriptions but its still funny to see! This is actually one of the bigger houses, some of them 9with dishes) are quite small and really not much more than a couple of sink sheets and a roof.

Cold-smoked duck breast, blueberry compote, Kozlik's triple crunch mustard, radish sprouts.

We really liked this cold-smoked duck breast. Lovely flavour and the crunch of mustard gave it some bite.

Actually it was just the amuse bouche. A piece of fish (can't remember which wrapped in a piece of bacon. Tasted a bit fishy actually.
