Chickpea moose served with Sea bream tartare. It was a kind of dish that tasted better as you ate more especially after half way. The "well-seasoned" moose had pleasant texture and a bit sour but in a good way. The sea bream was fresh and delightful; it elevated the overall 'pure' flavor. It was my favorite among the given amuse-bouche
