Kingfish tarter with spring onions and tomatoes

I was pondering what to shoot for the topic "Easily Amused" when my girlfriend Abby ahem'd me and pointed at our dog Bella, who was busy leaping happily after leaves that Abby was kicking up. Yes, there is no one I know more easily amused than Bella!

Amuse: Tuna "Niçoise"

 

Notes: Brand new and slated to be placed on the menu as a full portion, we were given this little preview. Tuna tartare with niçoise flavors, including a slice of tuna wrapped around a black olive and a dollop of basil purée.

for krista's dinner party, i assigned myself the amuse bouche, mainly because saying amuse bouche 'amooses' me. these are hands down, the oddest food i've ever prepared: parmesan tuille with green pea and mint sorbet.
