My favorite homemade bread recipe...

Finnish Cardamon Bread - makes two loaves.
2 pkgs dry yeast
1/4 cup warm water - 110 degrees F.
2 cups warm milk
3/4 cup sugar (or a full cup for a sweeter bread)
1/2 cup butter softened
1+1/2 teaspoon salt
1 teaspoon ground cardamon
2 eggs
7 to 8 cups of flour
1 teaspoon of cinnamon
In a large mixing bowl dissolve the yeast in warm water.
Add milk, sugar, butter, salt, cardamon, eggs and 3 cups of flour, beat until smooth.
Turn onto a floured surface, folding in enough flour to form a soft dough ball, usually 7 cups total.
Knead until smooth and elastic. (aprox 6 minutes)
Place in a greased bowl. Cover and let rise in a warm place for about an hour or until doubled.
An hour later punch down the dough. Turn onto a lightly floured surface. Divide into halves. Divide the halves into thirds.
Shape each piece into 13 inch ropes. Place three ropes onto a greased sheet pan and braid together, pinch the ends under.
Repeat for the other three making a second loaf. Sprinkle the tops with cinnamon.
Cover and let rise again, about 45 minutes.
Bake at 350 degrees for 25 minutes or so, testing with a toothpick.
Remove from pans and let cool.
Perfect for the holiday dinner or even makes for great toast with your morning coffee.
