Cornbread

 

I used this recipe as my guide. I used buttermilk and less black pepper. I didn’t even use fresh cracked pepper, and the cornbread was still too peppery. The buttermilk was a great substitute though. Overall, I loved the bread. It was savory not sweet, so it was great as a dinner side dish.

 

Ingredients:

 

* 1 cup flour

* 3/4 cup cornmeal

* 1 teaspoon baking powder

* 1 teaspoon salt

* No more than 1/2 tablespoon black pepper

* 1/2 cup non-fat milk

* 1/2 cup buttermilk

* 2 eggs

* 4 tablespoons of non-salted butter, melted (plus a little extra to grease the pan)

 

Preheat oven to 400°F. In a medium mixing bowl, mix together the flour, cornmeal, baking powder, salt, and pepper. In a small mixing bowl, mix together the eggs, milk, buttermilk, and butter. Stir the wet ingredients into the dry ingredients. Grease with butter a 9” diameter glass pie dish. Pour the batter into the pie dish. Bake for about 23 minutes until toothpick inserted in bread comes out clean.
