Aprovechando que iba a montar el decorado para Jazmín, aproveché para hacerle unas fotos. Al final tuve que volverlo a cambiar porque Jazmín no se veía en este fondo, pero Trufa quedó monísima! ♥
Um marrom que me lembrou doce de leite!! Ele é um pouco mais escuro do que na foto!
Usei:
1x Base
2x Trufa
1x TC Impala
Galta de vedella amb salsa d’espelta, mostassa i tòfona. Quatre bons tacs de galta tendres, ben cuits a baixa temperatura i coberts amb la salsa ja en el plat. Bo el conjunt però la galta ens va semblar una mica monòtona (per no dir avorrida) i massa abundant (no la vam acabar). És el que té la cocció a baixa temperatura, que és molt pràctica però presenta un resultat de vegades impersonal i massa uniforme que fa enyorar els múltiples matisos que aporta un bon guisat tradicional. Va estar correcte però no el tornariem a demanar.
LUNES DE TRUFAS
Hay dias como hoy, frios y grises, donde muchos de ustedes ya se encuentran en vacaciones y muchos otros aun se encuentran laborando o esta es su ultima semana de labores, pero eso no importa.
Hoy es lunes de trufas de chocolate, ese delicioso y delicado postre, aperitivo o pecado divino no solo a libia las tristezas del corazón sino que tambien es un buen acompañante en tiempos de cembrina.
Quien no se siente atraído por esta musa del placer ya sea rellena de chocolate blanco o con licor, no hay excusa para decirle NO a esta golosina de alta alcurnia.
Por eso lo invito a que esta semana se deleite con esta hermosura exotica en todas sus presentaciones y así empiece esta semana recargado de buena energia y con un toque de chocolate.

El revuelto de tartufino blanco puso las cosas de nuevo en su sitio, es decir: patas arriba. Yema de huevo cremosa y extremadamente sabrosa (suponemos que cocinada levemente a baja temperatura o sobre la brasa, vete tú a saber…) bajo láminas de trufa blanca aportando aroma. Bestial!, demencial!.

I els canelons de Sant Esteve amb beixamel de tòfona, malgrat els hi hagués anat bé haver abusar una mica més de la tòfona, van estar també impecables. Molt fins i gustosíssims, uns canelons de primera divisió.
La cosa encara es va superar amb la següent entrega. Truita de patates, vieira i maionesa de tòfona, tres ingredient bons per sí sols i molt ben preparats però que combinats entre ells van conformar un mos sensacional. Una combinació convincent i molt personal que es va confirmar com uns dels millor plats d’un menú en el que gairebé tot va estar impecable.
I el següent ens va mantenir el nivell altíssim: puré de coliflor picant, gel de rovell d’ou, Idiazàbal i tòfona en una altra gran combinació (mai haguéssim imaginat que la coliflor i la tòfona combinessis tan bé). Espectacular!!.
Así está ya la peque!! Ya pesa 37 gramitos, está dada de alta, y muy activa... o más bien hiperactiva... xDDD
Ya mismo no le irá bien su nombre de Trufa por el color, está cambiando el manto a gris clarita! A ver si cuando se le ponga todo el pelito, le vuelvo a hacer fotos para que la veáis!

Conforme alguém disse no blog, eu também achei difícil de moldar, mesmo aguardando as 48 horas e depois optei por congelar. Mesmo assim não ficam muito consistentes, mas pouco importa, porque o sabor é definitivamente magnífico! Basta ter a mistura mágica de cachaça e lima ;-)
