invert the proved loaf on parchment-lined peel & carefully remove the proofing linen towel to
uncover the shaped loaf.
It starts spreading itself rapidly creating those natural cracks all over the surface. Load it
in the oven (parchment and all) as soon as possible & somehow supply burst of steam.
This rye bread loves steam lots of it.
It's very simple: 80% whole rye flour/825 g, 20% bread flour/200 g, 18 g sea salt, 785 g water, 10% seeds, which yields a 78% hydration dough (exclude the seeds).
Rye dough needs natural starter to thrive; it's a perfect marriage.

As the first believers in Christ, the three kings came from the East bearing gifts: Melchior offers a box of thirty gold golds, in recognition of Christ the King; Balthasar presents frankincense in an incense boat, symbolizing Christ's divinity; and Gasper gives a round censer filled with myrrh, a Roman symbol of death. This sculpture, probably from a large alterpiece, is attributed to a workshop at the upper Swabian monastry of Ottobeuren.
While the museum guards were on the lookout for that professor in a Panama hat and my students inconspicously clicked away inside, I spent the time taking photos just across the street. Old place, new points of view.
These cute little guys were nesting on the side of the Devil's Canyon 4-wheel drive road in Colorado (near Mount Evans.)
The way I look at things, when you come across three accordions in the grass, you stop and take a photo.

Spotted Towhee (Pipilo maculatus)

The Towhee is a striking sparrow, with its bold colors and bright red eye. There is no mistaking this bird.
The three sparrows in this series were all in the same place, on a moss and lichen encrusted rock, looking for goodies.

You may wonder why they're all leaning forward slightly in this shot. Mere moments before snapping the shutter, from off camera, Mom yells, "Stay away from the fence!! There's poison ivy!"
At least they kept smiling.
Our Allium have trouble surviving over the winter. This plant did well and put up three stalks this Spring!
The next day, and three of the arches have been partially demolished.
While I was taking a few photos I chatted with an elderly gentleman who had lived in this area when he was a child. He told me that back then the archways were used as stables for horses that were used to do maintenance work on the nearby railway.
