Ingredient challenge eggplant (with a twist--combine Jewish and Korean food traditions)! This is fried eggplant using a common Korean technique/assembly, using middle eastern Sephardic spices/ingredients.

To be eaten with...a pita, schnitzel, my homemade hummus, and a splash of (Asian) sriracha sauce!

A success, I think! The eggplant inside is very moist but very crispy outside.
